Description

Ingredients

  • 8 ounces rotini pasta
  • 1 cup cherry tomatoes, halved
  • 1 cup cucumber, diced
  • 1/2 cup red onion, finely chopped
  • 1/2 cup bell pepper, diced
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup fresh cilantro, chopped
  • 1/4 cup olive oil
  • 2 tablespoons red wine vinegar
  • 2 tablespoons fresh lemon juice
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1/2 teaspoon red pepper flakes (optional)
  • Salt and pepper to taste

Instructions

  1. Cook the rotini pasta according to package instructions. Drain and rinse under cold water to cool.
  2. In a large bowl, combine the cooked pasta, cherry tomatoes, cucumber, red onion, bell pepper, parsley, and cilantro.
  3. In a separate small bowl, whisk together the olive oil, red wine vinegar, lemon juice, garlic, oregano, red pepper flakes, salt, and pepper.
  4. Pour the chimichurri dressing over the pasta salad and toss until everything is well coated.
  5. Cover and refrigerate for at least 30 minutes to allow the flavors to meld.
  6. Serve chilled or at room temperature, and enjoy!
