Description

A delicious and hearty Chicken and Rice Bowl featuring sautéed chicken, charred corn, creamy dressing, and fresh avocado.


Ingredients

  • 2 cups fluffy jasmine rice
  • 1 pound chicken thighs, cut into bite-sized pieces
  • 1 tablespoon avocado oil
  • 1 teaspoon smoked paprika
  • 1 teaspoon onion powder
  • 1 teaspoon ground coriander
  • Salt and freshly cracked black pepper to taste
  • 1 cup sweet corn (fresh, frozen, or canned)
  • 1/2 cup Greek yogurt
  • 1/4 cup buttermilk
  • 1/2 cup feta cheese, crumbled
  • 1/4 cup fresh parsley, chopped
  • 1 lime, zested and juiced
  • 1 ripe avocado, diced (optional)
  • Sriracha or your favorite hot sauce (optional)

Instructions

  1. Heat the avocado oil in a large skillet over medium-high heat. Add the chicken pieces and season with smoked paprika, onion powder, coriander, salt, and pepper. Sauté for about 8-10 minutes, or until the chicken is golden and cooked through. Transfer the chicken to a plate and keep warm.
  2. In the same skillet, toss in the corn and sauté for 4-5 minutes until it begins to caramelize and develop a nice char.
  3. In a separate bowl, whisk together the Greek yogurt, buttermilk, lime zest, lime juice, and half of the crumbled feta until smooth and creamy.
  4. To create your bowls, layer the jasmine rice at the bottom of each serving dish. Top with the sautéed chicken, charred corn, and a generous drizzle of the creamy dressing.
  5. Finish off by sprinkling the remaining feta and chopped parsley on top. Add diced avocado and a splash of hot sauce if you like a little heat.

Notes

  • For an extra layer of flavor, consider roasting the corn before adding it to the skillet.
  • You can also swap the chicken for grilled shrimp or tofu for a delightful twist.
