A delicious and hearty Chicken and Rice Bowl featuring sautéed chicken, charred corn, creamy dressing, and fresh avocado.

- 2 cups fluffy jasmine rice
- 1 pound chicken thighs, cut into bite-sized pieces
- 1 tablespoon avocado oil
- 1 teaspoon smoked paprika
- 1 teaspoon onion powder
- 1 teaspoon ground coriander
- Salt and freshly cracked black pepper to taste
- 1 cup sweet corn (fresh, frozen, or canned)
- 1/2 cup Greek yogurt
- 1/4 cup buttermilk
- 1/2 cup feta cheese, crumbled
- 1/4 cup fresh parsley, chopped
- 1 lime, zested and juiced
- 1 ripe avocado, diced (optional)
- Sriracha or your favorite hot sauce (optional)
Instructions
- Heat the avocado oil in a large skillet over medium-high heat. Add the chicken pieces and season with smoked paprika, onion powder, coriander, salt, and pepper. Sauté for about 8-10 minutes, or until the chicken is golden and cooked through. Transfer the chicken to a plate and keep warm.
- In the same skillet, toss in the corn and sauté for 4-5 minutes until it begins to caramelize and develop a nice char.
- In a separate bowl, whisk together the Greek yogurt, buttermilk, lime zest, lime juice, and half of the crumbled feta until smooth and creamy.
- To create your bowls, layer the jasmine rice at the bottom of each serving dish. Top with the sautéed chicken, charred corn, and a generous drizzle of the creamy dressing.
- Finish off by sprinkling the remaining feta and chopped parsley on top. Add diced avocado and a splash of hot sauce if you like a little heat.
Notes
- For an extra layer of flavor, consider roasting the corn before adding it to the skillet.
- You can also swap the chicken for grilled shrimp or tofu for a delightful twist.
