- 2 cups cooked chicken, shredded
- 1 cup frozen mixed vegetables (peas, carrots, corn)
- 1 cup chicken broth
- 1 cup milk
- 1 tablespoon olive oil
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon dried thyme
- Salt and pepper to taste
- 1 cup all-purpose flour
- 1 tablespoon baking powder
- 1/2 teaspoon salt
- 1/4 cup unsalted butter, melted
- 1/2 cup shredded cheddar cheese
- 1 cup Red Lobster Cheddar Bay Biscuit mix (or similar)
- 1/2 cup water
Instructions
- Preheat the oven to 400°F.
- In a large skillet, heat olive oil over medium heat. Add shredded chicken, mixed vegetables, garlic powder, onion powder, thyme, salt, and pepper. Stir to combine and cook for about 5 minutes until heated through.
- Pour in chicken broth and milk, stirring until well mixed. Remove from heat and set aside.
- In a separate bowl, combine flour, baking powder, and salt. Add melted butter and mix until crumbly. Stir in cheddar cheese.
- In another bowl, prepare the Red Lobster biscuit mix according to package instructions, adding water as needed to form a soft dough.
- Pour the chicken mixture into a greased 9×13-inch baking dish. Drop spoonfuls of the biscuit dough over the chicken mixture, covering it evenly.
- Bake in the preheated oven for 25-30 minutes or until the biscuit topping is golden brown and cooked through.
- Let cool for 5 minutes before serving.
Notes
- For a spicier version, add 1/2 teaspoon of cayenne pepper to the chicken mixture.
- To make it a bit healthier, substitute half of the all-purpose flour with whole wheat flour.
