Ingredients

  • 1 cup frozen mixed vegetables (peas, carrots, corn)
  • 1 cup chicken broth
  • 1 cup milk
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • 1 cup all-purpose flour
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1/4 cup unsalted butter, melted
  • 1/2 cup shredded cheddar cheese
  • 1 cup Red Lobster Cheddar Bay Biscuit mix (or similar)
  • 1/2 cup water

Instructions

  1. Preheat the oven to 400°F.
  2. In a large skillet, heat olive oil over medium heat. Add shredded chicken, mixed vegetables, garlic powder, onion powder, thyme, salt, and pepper. Stir to combine and cook for about 5 minutes until heated through.
  3. Pour in chicken broth and milk, stirring until well mixed. Remove from heat and set aside.
  4. In a separate bowl, combine flour, baking powder, and salt. Add melted butter and mix until crumbly. Stir in cheddar cheese.
  5. In another bowl, prepare the Red Lobster biscuit mix according to package instructions, adding water as needed to form a soft dough.
  6. Pour the chicken mixture into a greased 9×13-inch baking dish. Drop spoonfuls of the biscuit dough over the chicken mixture, covering it evenly.
  7. Bake in the preheated oven for 25-30 minutes or until the biscuit topping is golden brown and cooked through.
  8. Let cool for 5 minutes before serving.

Notes

  • For a spicier version, add 1/2 teaspoon of cayenne pepper to the chicken mixture.
  • To make it a bit healthier, substitute half of the all-purpose flour with whole wheat flour.
