Description

A comforting and easy Chicken Cobbler recipe that combines shredded chicken and mixed vegetables under a fluffy biscuit topping.

Ingredients

Scale
  • 2 cups cooked chicken, shredded or diced
  • 1 cup frozen mixed vegetables (peas, carrots, corn)
  • 1 cup chicken broth
  • 1 cup milk
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon dried thyme
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 cup all-purpose flour
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1/4 cup unsalted butter, melted
  • 1 cup milk
  • 1 large egg

Instructions

  1. Preheat the oven to 400°F.
  2. In a large mixing bowl, combine the cooked chicken, frozen mixed vegetables, chicken broth, 1 cup of milk, garlic powder, onion powder, thyme, salt, and black pepper. Stir until well combined.
  3. Pour the chicken mixture into a greased 9×13-inch baking dish.
  4. In another bowl, whisk together the flour, baking powder, and 1/2 teaspoon salt. Add the melted butter, 1 cup of milk, and egg. Mix until just combined; do not overmix.
  5. Spoon the batter over the chicken mixture in the baking dish, spreading it evenly.
  6. Bake in the preheated oven for 30-35 minutes, or until the top is golden brown and a toothpick inserted into the batter comes out clean.
  7. Let cool for 5-10 minutes before serving.

Notes

  • For a creamier texture, substitute half of the chicken broth with cream of chicken soup.
  • You can also add herbs like parsley or basil for extra flavor.
  • For a spicy kick, mix in some diced jalapeños or a dash of hot sauce to the chicken mixture.
