- For the dumplings:
- 2 cups all-purpose flour
- 1 tablespoon baking powder
- 1/2 teaspoon salt
- 1 tablespoon sugar
- 1/4 cup cold butter, cubed
- 3/4 cup milk
Instructions
- In a large pot, heat olive oil and butter over medium heat.
- Add the diced onion, carrots, celery, and garlic. Sauté for about 5 minutes until the vegetables are tender.
- Stir in the shredded chicken, thyme, parsley, salt, and pepper.
- Sprinkle the flour over the mixture and stir well to combine.
- Gradually add the chicken broth and milk, stirring constantly until the mixture thickens slightly.
- Bring to a gentle simmer.
- In a separate bowl, combine the flour, baking powder, salt, and sugar for the dumplings.
- Cut in the cold butter until the mixture resembles coarse crumbs.
- Stir in the milk until just combined.
- Drop spoonfuls of the dumpling batter onto the simmering chicken mixture.
- Cover the pot and let the dumplings cook for about 15-20 minutes without lifting the lid.
- Serve hot, garnished with fresh parsley if desired.

- For a richer flavor, use homemade chicken broth instead of store-bought.
- Add frozen peas or corn during the last few minutes of cooking for added color and nutrition.
