  • 1/2 teaspoon salt
  • 1 tablespoon sugar
  • 1/4 cup cold butter, cubed
  • 3/4 cup milk

Instructions

  1. In a large pot, heat olive oil and butter over medium heat.
  2. Add the diced onion, carrots, celery, and garlic. Sauté for about 5 minutes until the vegetables are tender.
  3. Stir in the shredded chicken, thyme, parsley, salt, and pepper.
  4. Sprinkle the flour over the mixture and stir well to combine.
  5. Gradually add the chicken broth and milk, stirring constantly until the mixture thickens slightly.
  6. Bring to a gentle simmer.
  7. In a separate bowl, combine the flour, baking powder, salt, and sugar for the dumplings.
  8. Cut in the cold butter until the mixture resembles coarse crumbs.
  9. Stir in the milk until just combined.
  10. Drop spoonfuls of the dumpling batter onto the simmering chicken mixture.
  11. Cover the pot and let the dumplings cook for about 15-20 minutes without lifting the lid.
  12. Serve hot, garnished with fresh parsley if desired.
