- 2 pounds ground chicken
- 1 medium onion, finely grated
- 4 cloves garlic, minced
- 1/4 cup fresh parsley, chopped
- 1 tablespoon red pepper flakes
- 1 tablespoon paprika
- 1 teaspoon ground cumin
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/4 cup olive oil
- 1 tablespoon lemon juice
- Skewers (soaked in water if wooden)
Instructions
- In a large mixing bowl, combine the ground chicken, grated onion, minced garlic, chopped parsley, red pepper flakes, paprika, cumin, salt, and black pepper. Mix well until all ingredients are evenly incorporated.
- Add the olive oil and lemon juice to the mixture, and mix again until smooth and well combined.
- Cover the bowl with plastic wrap and refrigerate for at least 1 hour to allow the flavors to meld and the mixture to firm up.
- Preheat your grill or grill pan to medium-high heat.
- Divide the chicken mixture into equal portions (about 6-8) and mold each portion around a skewer, pressing firmly to ensure it adheres.
- Place the skewers on the grill and cook for about 5-7 minutes on each side, or until the chicken is fully cooked and has nice grill marks.
- Remove the kebabs from the grill and let them rest for a few minutes before serving.
- Serve the Chicken Adana Kebabs with pita bread, fresh vegetables, and your favorite sauce, such as tzatziki or garlic yogurt.
