- 2 cups fresh or frozen cherries, pitted
- 1 cup granulated sugar
- 2 tablespoons cornstarch
- 1 tablespoon lemon juice
- 1 teaspoon vanilla extract
- 1 pre-made pie crust (9-inch)
- 1 cup all-purpose flour
- 1/2 cup rolled oats
- 1/2 cup brown sugar, packed
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon salt
- 1/2 cup unsalted butter, melted
Instructions
- Preheat your oven to 375°F (190°C).
- In a mixing bowl, combine the cherries, granulated sugar, cornstarch, lemon juice, and vanilla extract. Stir until the cherries are well coated. Pour the mixture into the pie crust.
- In another bowl, mix together the flour, rolled oats, brown sugar, cinnamon, and salt. Drizzle in the melted butter and mix until crumbly.
- Sprinkle the crumble mixture evenly over the cherry filling in the pie crust.
- Bake in the preheated oven for 30-35 minutes, or until the topping is golden brown and the filling is bubbling.
- Allow the pie to cool for at least 15 minutes before serving to let the filling set.
Notes
- For a twist, try adding a teaspoon of almond extract to the cherry filling for extra flavor.
- You can also substitute half of the cherries with blueberries or raspberries for a mixed berry crumble pie.
