Description

A decadent dessert featuring layers of ladyfingers soaked in coffee and amaretto, mascarpone cheese, and a cherry mixture.


Ingredients

  • 2 cups fresh or frozen cherries, pitted and halved
  • 1/2 cup granulated sugar, divided
  • 1/2 cup water
  • 1/2 cup amaretto liqueur
  • 1 cup heavy cream
  • 8 ounces mascarpone cheese, softened
  • 1 teaspoon vanilla extract
  • 1 cup strong brewed coffee, cooled
  • 24 ladyfinger cookies
  • Cocoa powder, for dusting

Instructions

  1. In a small saucepan, combine the cherries, 1/4 cup of sugar, and water. Cook over medium heat for about 5 minutes until the cherries soften and the mixture thickens slightly. Remove from heat and stir in 1/4 cup of amaretto. Let it cool completely.
  2. In a mixing bowl, whip the heavy cream with the remaining 1/4 cup of sugar and vanilla extract until stiff peaks form. Gently fold in the mascarpone cheese until well combined.
  3. In a shallow dish, combine the cooled coffee with the remaining 1/4 cup of amaretto. Quickly dip each ladyfinger into the coffee mixture, ensuring they are soaked but not soggy.
  4. Layer half of the dipped ladyfingers in the bottom of a 9×9 inch dish. Spread half of the mascarpone mixture over the ladyfingers, followed by half of the cherry mixture. Repeat the layers with the remaining ladyfingers, mascarpone mixture, and cherries.
  5. Cover and refrigerate for at least 4 hours, or overnight for best results. Before serving, dust the top with cocoa powder.

Notes

  • For a richer flavor, try adding a tablespoon of almond extract to the mascarpone mixture.
  • You can also substitute the cherries with raspberries or strawberries for a different fruit twist.
