Description
A decadent dessert featuring layers of ladyfingers soaked in coffee and amaretto, mascarpone cheese, and a cherry mixture.
Ingredients

- 2 cups fresh or frozen cherries, pitted and halved
- 1/2 cup granulated sugar, divided
- 1/2 cup water
- 1/2 cup amaretto liqueur
- 1 cup heavy cream
- 8 ounces mascarpone cheese, softened
- 1 teaspoon vanilla extract
- 1 cup strong brewed coffee, cooled
- 24 ladyfinger cookies
- Cocoa powder, for dusting
Instructions
- In a small saucepan, combine the cherries, 1/4 cup of sugar, and water. Cook over medium heat for about 5 minutes until the cherries soften and the mixture thickens slightly. Remove from heat and stir in 1/4 cup of amaretto. Let it cool completely.
- In a mixing bowl, whip the heavy cream with the remaining 1/4 cup of sugar and vanilla extract until stiff peaks form. Gently fold in the mascarpone cheese until well combined.
- In a shallow dish, combine the cooled coffee with the remaining 1/4 cup of amaretto. Quickly dip each ladyfinger into the coffee mixture, ensuring they are soaked but not soggy.
- Layer half of the dipped ladyfingers in the bottom of a 9×9 inch dish. Spread half of the mascarpone mixture over the ladyfingers, followed by half of the cherry mixture. Repeat the layers with the remaining ladyfingers, mascarpone mixture, and cherries.
- Cover and refrigerate for at least 4 hours, or overnight for best results. Before serving, dust the top with cocoa powder.
Notes
- For a richer flavor, try adding a tablespoon of almond extract to the mascarpone mixture.
- You can also substitute the cherries with raspberries or strawberries for a different fruit twist.
