Description

A delicious and healthy twist on traditional lasagna, made with zucchini, spinach, and a blend of cheeses.


Ingredients

Scale
  • 2 medium zucchinis, sliced thinly (about 4 cups)
  • 1 tablespoon olive oil
  • 1 teaspoon salt, divided
  • 1 cup ricotta cheese
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 1 large egg
  • 2 cups fresh spinach, chopped
  • 2 cups marinara sauce
  • 1 teaspoon garlic powder
  • 1 teaspoon Italian seasoning
  • 1/4 teaspoon black pepper

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a large skillet, heat olive oil over medium heat. Add the zucchini slices and sprinkle with 1/2 teaspoon of salt. Sauté for about 5 minutes until slightly softened. Remove from heat and set aside.
  3. In a mixing bowl, combine the ricotta cheese, 1/2 cup of mozzarella cheese, Parmesan cheese, egg, chopped spinach, garlic powder, Italian seasoning, black pepper, and the remaining 1/2 teaspoon of salt. Mix until well combined.
  4. In a 9×13 inch baking dish, spread 1 cup of marinara sauce on the bottom. Layer half of the sautéed zucchini on top of the sauce.
  5. Spread half of the ricotta mixture over the zucchini. Top with another cup of marinara sauce.
  6. Repeat the layers with the remaining zucchini, ricotta mixture, and another cup of marinara sauce.
  7. Finish by spreading the last cup of marinara sauce on top and sprinkling the remaining mozzarella cheese over it.
  8. Cover the baking dish with aluminum foil and bake for 25 minutes. Remove the foil and bake for an additional 15 minutes, or until the cheese is bubbly and golden.
  9. Let the lasagna cool for 10 minutes before slicing and serving.

Notes

  • For added flavor, mix in some cooked ground turkey or beef into the marinara sauce.
  • Substitute the spinach with kale or add other vegetables like mushrooms or bell peppers for a different twist.
