Description
A delicious and healthy twist on traditional lasagna, made with zucchini, spinach, and a blend of cheeses.
Ingredients

- 2 medium zucchinis, sliced thinly (about 4 cups)
- 1 tablespoon olive oil
- 1 teaspoon salt, divided
- 1 cup ricotta cheese
- 1 cup shredded mozzarella cheese
- 1/2 cup grated Parmesan cheese
- 1 large egg
- 2 cups fresh spinach, chopped
- 2 cups marinara sauce
- 1 teaspoon garlic powder
- 1 teaspoon Italian seasoning
- 1/4 teaspoon black pepper
Instructions
- Preheat the oven to 375°F (190°C).
- In a large skillet, heat olive oil over medium heat. Add the zucchini slices and sprinkle with 1/2 teaspoon of salt. Sauté for about 5 minutes until slightly softened. Remove from heat and set aside.
- In a mixing bowl, combine the ricotta cheese, 1/2 cup of mozzarella cheese, Parmesan cheese, egg, chopped spinach, garlic powder, Italian seasoning, black pepper, and the remaining 1/2 teaspoon of salt. Mix until well combined.
- In a 9×13 inch baking dish, spread 1 cup of marinara sauce on the bottom. Layer half of the sautéed zucchini on top of the sauce.
- Spread half of the ricotta mixture over the zucchini. Top with another cup of marinara sauce.
- Repeat the layers with the remaining zucchini, ricotta mixture, and another cup of marinara sauce.
- Finish by spreading the last cup of marinara sauce on top and sprinkling the remaining mozzarella cheese over it.
- Cover the baking dish with aluminum foil and bake for 25 minutes. Remove the foil and bake for an additional 15 minutes, or until the cheese is bubbly and golden.
- Let the lasagna cool for 10 minutes before slicing and serving.
Notes
- For added flavor, mix in some cooked ground turkey or beef into the marinara sauce.
- Substitute the spinach with kale or add other vegetables like mushrooms or bell peppers for a different twist.
