Description

A delicious and hearty dish featuring sweet potatoes loaded with shredded prime rib, cheddar cheese, and a creamy sour cream mixture.


Ingredients

  • 2 large sweet potatoes
  • 1 cup cooked prime rib, shredded
  • 1 cup shredded cheddar cheese
  • 1/2 cup sour cream
  • 1/4 cup green onions, chopped
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Wash and scrub the sweet potatoes, then pierce them several times with a fork. Rub them with olive oil and sprinkle with salt.
  3. Place the sweet potatoes on a baking sheet and bake for 45-60 minutes, or until tender when pierced with a fork.
  4. While the sweet potatoes are baking, prepare the prime rib by shredding it into bite-sized pieces.
  5. In a small bowl, mix together the sour cream, garlic powder, onion powder, and a pinch of salt and pepper.
  6. Once the sweet potatoes are done, remove them from the oven and let them cool for a few minutes. Cut them in half lengthwise and gently fluff the insides with a fork.
  7. Top each sweet potato half with shredded prime rib, a generous amount of cheddar cheese, and a dollop of the sour cream mixture.
  8. Return the loaded sweet potatoes to the oven for an additional 5-10 minutes, or until the cheese is melted and bubbly.
  9. Remove from the oven and garnish with chopped green onions before serving.

Notes

  • For a spicy kick, add diced jalapeños on top before baking.
  • You can also substitute the prime rib with shredded chicken or pulled pork for a different flavor profile.
