- 2 cups mashed potatoes (prepared and cooled)
- 1 cup shredded cheddar cheese
- 1/2 cup grated Parmesan cheese
- 1/4 cup sour cream
- 1/4 cup chopped green onions
- 1 large egg
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 cup breadcrumbs (for coating)
- Cooking spray or oil for greasing
Instructions
- Preheat the oven to 400°F (200°C) and lightly grease a baking sheet with cooking spray or oil.
- In a large bowl, combine the cooled mashed potatoes, cheddar cheese, Parmesan cheese, sour cream, green onions, egg, garlic powder, onion powder, salt, and black pepper. Mix until well combined.
- Using your hands, form the potato mixture into small balls or puffs, about 1 to 1.5 inches in diameter.
- Roll each puff in breadcrumbs until fully coated and place them on the prepared baking sheet.
- Bake in the preheated oven for 20-25 minutes, or until golden brown and crispy on the outside.
- Remove from the oven and let cool for a few minutes before serving.
Notes
- For a spicy kick, add 1/4 teaspoon of cayenne pepper or some chopped jalapeños to the potato mixture.
- Substitute different cheeses like mozzarella or pepper jack for a unique flavor twist.
