Ingredients

  • 1 cup shredded cheddar cheese
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup sour cream
  • 1/4 cup chopped green onions
  • 1 large egg
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup breadcrumbs (for coating)
  • Cooking spray or oil for greasing

Instructions

  1. Preheat the oven to 400°F (200°C) and lightly grease a baking sheet with cooking spray or oil.
  2. In a large bowl, combine the cooled mashed potatoes, cheddar cheese, Parmesan cheese, sour cream, green onions, egg, garlic powder, onion powder, salt, and black pepper. Mix until well combined.
  3. Using your hands, form the potato mixture into small balls or puffs, about 1 to 1.5 inches in diameter.
  4. Roll each puff in breadcrumbs until fully coated and place them on the prepared baking sheet.
  5. Bake in the preheated oven for 20-25 minutes, or until golden brown and crispy on the outside.
