Description
Cheesy Mashed Potato Puff Bites are delicious, crispy bites made from mashed potatoes and cheese, perfect as a snack or appetizer.

- 2 cups mashed potatoes (prepared, preferably leftover)
- 1 cup shredded cheddar cheese
- 1/2 cup grated Parmesan cheese
- 1/4 cup sour cream
- 1/4 cup chopped green onions
- 1 teaspoon garlic powder
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 cup panko breadcrumbs
- 1 large egg, beaten
- Cooking spray or oil for greasing
Instructions
- Preheat the oven to 400°F. Grease a baking sheet with cooking spray or oil.
- In a large bowl, combine the mashed potatoes, cheddar cheese, Parmesan cheese, sour cream, green onions, garlic powder, salt, and black pepper. Mix until well combined.
- Using a tablespoon or small cookie scoop, portion out the potato mixture and shape it into small balls or puffs. Place them on the prepared baking sheet.
- In a shallow dish, place the panko breadcrumbs. Roll each potato puff in the breadcrumbs until fully coated, then return them to the baking sheet.
- Brush or spray the tops of the puffs lightly with oil. Bake in the preheated oven for 20-25 minutes, or until golden brown and crispy.
- Remove from the oven and let cool for a few minutes before serving. Enjoy warm!
Notes
- For a spicier kick, add 1/4 teaspoon of cayenne pepper or chopped jalapeños to the potato mixture.
- For a healthier version, substitute Greek yogurt for sour cream and use whole wheat panko breadcrumbs.
