Description

Cheesy Mashed Potato Puff Bites are delicious, crispy bites made from mashed potatoes and cheese, perfect as a snack or appetizer.


Ingredients

  • 2 cups mashed potatoes (prepared, preferably leftover)
  • 1 cup shredded cheddar cheese
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup sour cream
  • 1/4 cup chopped green onions
  • 1 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup panko breadcrumbs
  • 1 large egg, beaten
  • Cooking spray or oil for greasing

Instructions

  1. Preheat the oven to 400°F. Grease a baking sheet with cooking spray or oil.
  2. In a large bowl, combine the mashed potatoes, cheddar cheese, Parmesan cheese, sour cream, green onions, garlic powder, salt, and black pepper. Mix until well combined.
  3. Using a tablespoon or small cookie scoop, portion out the potato mixture and shape it into small balls or puffs. Place them on the prepared baking sheet.
  4. In a shallow dish, place the panko breadcrumbs. Roll each potato puff in the breadcrumbs until fully coated, then return them to the baking sheet.
  5. Brush or spray the tops of the puffs lightly with oil. Bake in the preheated oven for 20-25 minutes, or until golden brown and crispy.
  6. Remove from the oven and let cool for a few minutes before serving. Enjoy warm!

Notes

  • For a spicier kick, add 1/4 teaspoon of cayenne pepper or chopped jalapeños to the potato mixture.
  • For a healthier version, substitute Greek yogurt for sour cream and use whole wheat panko breadcrumbs.
