Instructions

  1. In a medium skillet, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
  2. Stir in the minced garlic and cook for an additional 1 minute until fragrant.
  3. Add the ground cumin, ground coriander, turmeric, red chili powder, and salt. Stir well and cook for 1-2 minutes to toast the spices.
  4. Add the diced tomatoes and cook for another 3-4 minutes until the mixture thickens slightly.
  5. Stir in the drained cannellini beans and cook for an additional 5 minutes, allowing the beans to warm through and absorb the flavors.
  6. Remove the skillet from heat and stir in the shredded cheddar cheese until melted and combined.
  7. While the bean mixture is cooking, toast the slices of whole grain bread until golden brown.
  8. To serve, spoon the cheesy masala beans over the toasted bread and garnish with chopped cilantro.
