- 1 can (15 oz) cannellini beans, drained and rinsed
- 1 tablespoon olive oil
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 1/2 teaspoon turmeric
- 1/2 teaspoon red chili powder (adjust to taste)
- Salt to taste
- 1/2 cup diced tomatoes (fresh or canned)
- 1/2 cup shredded cheddar cheese
- 4 slices of whole grain bread
- Fresh cilantro, chopped (for garnish)
Instructions
- In a medium skillet, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
- Stir in the minced garlic and cook for an additional 1 minute until fragrant.
- Add the ground cumin, ground coriander, turmeric, red chili powder, and salt. Stir well and cook for 1-2 minutes to toast the spices.
- Add the diced tomatoes and cook for another 3-4 minutes until the mixture thickens slightly.
- Stir in the drained cannellini beans and cook for an additional 5 minutes, allowing the beans to warm through and absorb the flavors.
- Remove the skillet from heat and stir in the shredded cheddar cheese until melted and combined.
- While the bean mixture is cooking, toast the slices of whole grain bread until golden brown.
- To serve, spoon the cheesy masala beans over the toasted bread and garnish with chopped cilantro.
Notes
- For a creamier texture, add a splash of heavy cream or sour cream to the bean mixture before serving.
- Customize the spice level by adding diced jalapeños or using a milder chili powder for a less spicy version.
