- 2 pounds frozen hashbrowns, thawed
- 1 cup sour cream
- 1 can (10.5 ounces) cream of chicken soup
- 1 cup shredded cheddar cheese
- 1/2 cup chopped onion
- 1/2 cup melted butter
- 1 teaspoon garlic powder
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 cup crushed cornflakes (optional, for topping)
- 1/4 cup additional melted butter (optional, for topping)
Instructions
- Preheat your oven to 350°F (175°C).
- In a large mixing bowl, combine the thawed hashbrowns, sour cream, cream of chicken soup, shredded cheddar cheese, chopped onion, melted butter, garlic powder, salt, and black pepper. Mix well until all ingredients are evenly combined.
- Pour the mixture into a greased 9×13-inch baking dish, spreading it out evenly.
- If using, mix the crushed cornflakes with the additional melted butter and sprinkle over the top of the casserole for added crunch.
- Bake in the preheated oven for 45-50 minutes, or until the casserole is bubbly and the top is golden brown.
- Remove from the oven and let it cool for about 10 minutes before serving.
Notes
- For a spicier version, add 1/2 cup of diced jalapeños to the mixture before baking.
- You can also substitute the cream of chicken soup with cream of mushroom soup for a vegetarian option.
