Description
Delicious cheesy beef burritos served with crispy fries, perfect for a satisfying meal.
Ingredients
Scale
- 1 pound ground beef
- 1 teaspoon chili seasoning
- 1 teaspoon ground cumin
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- Salt and pepper to taste
- 1 cup shredded mozzarella cheese
- 4 large tortillas
- 1 cup cooked jasmine rice
- 1 cup refried black beans
- 1 cup pico de gallo
- 1 tablespoon avocado oil
- 2 large russet potatoes, sliced into fries
- 1 teaspoon smoked paprika
- 1 teaspoon onion powder
- 1 tablespoon fresh parsley, chopped (optional)
Instructions
- Preheat your oven to 425°F.
- In a skillet over medium heat, cook the ground beef until browned, about 5-7 minutes, then drain any excess fat.
- Sprinkle in the chili seasoning, cumin, garlic powder, onion powder, salt, and pepper. Stir well and let it cook for another 2 minutes to blend the flavors.
- In a mixing bowl, combine the seasoned beef with the jasmine rice, refried black beans, and half of the mozzarella cheese.
- Take a tortilla and place a generous scoop of the beef mixture in the center. Fold the sides in and roll it up tightly. Repeat this process with the remaining tortillas.
- In another bowl, coat the potato fries with avocado oil, smoked paprika, onion powder, salt, and pepper until they are well covered. Spread them out on a baking sheet in a single layer.
- Bake the fries for 25-30 minutes, turning them halfway through, until they are crispy and golden.
- While the fries are baking, heat a skillet over medium heat and place the burritos seam-side down. Cook for 2-3 minutes on each side until they are golden brown and crispy.
- Once cooked, remove the burritos from the skillet and sprinkle the remaining mozzarella cheese on top. Cover the skillet for a minute to allow the cheese to melt.
- Serve the cheesy beef wraps alongside the crispy fries and a side of pico de gallo. Optionally, garnish with fresh parsley for an added touch.
Notes
- Feel free to customize the fillings based on your preferences.
- For a spicier kick, add jalapeños to the beef mixture.
- Leftover burritos can be stored in the refrigerator for up to 3 days.
