- 1/4 cup chia seeds
- 1/4 cup cream cheese, softened
- 1/4 cup Greek yogurt
- 1/4 cup maple syrup or honey
- 1 teaspoon vanilla extract
- 1/2 teaspoon lemon juice
- 1/4 teaspoon salt
- Fresh berries or fruit for topping (optional)
Instructions
- In a medium bowl, whisk together the almond milk, cream cheese, Greek yogurt, maple syrup (or honey), vanilla extract, lemon juice, and salt until smooth and well combined.
- Stir in the chia seeds until evenly distributed.
- Cover the bowl and refrigerate for at least 4 hours or overnight to allow the chia seeds to absorb the liquid and thicken the mixture.
- Once the pudding has set, give it a good stir. If it’s too thick, add a splash of almond milk to reach your desired consistency.
- Serve in individual bowls or jars, topped with fresh berries or your choice of fruit.
Notes
- For a richer flavor, try adding a tablespoon of powdered sugar or a flavored extract like almond or coconut.
- To make it a chocolate cheesecake chia pudding, mix in 2 tablespoons of cocoa powder and adjust the sweetness as needed.
