- 4 cups beef broth
- 2 medium potatoes, diced
- 1 cup carrots, diced
- 1 cup celery, diced
- 1 teaspoon Worcestershire sauce
- 1 teaspoon mustard
- 1 teaspoon salt
- ½ teaspoon black pepper
- 1 cup shredded cheddar cheese
- 1 cup milk
- ¼ cup sour cream
- Chopped green onions for garnish (optional)
Instructions
- In a large pot over medium heat, brown the ground beef until fully cooked. Drain excess fat.
- Add the chopped onion and minced garlic to the pot, cooking until the onion is translucent, about 3-4 minutes.
- Pour in the beef broth and add the diced potatoes, carrots, and celery. Bring to a boil, then reduce heat and let simmer for about 15-20 minutes, or until the vegetables are tender.
- Stir in the Worcestershire sauce, mustard, salt, and black pepper.
- Reduce the heat to low and add the shredded cheddar cheese, stirring until melted and smooth.
- Slowly stir in the milk and sour cream, heating through but not boiling.
- Serve hot, garnished with chopped green onions if desired.
