Description

Ingredients

  • 2 boneless, skinless chicken breasts (about 1 pound)
  • 1 large onion, thinly sliced
  • 1 cup walnuts, chopped
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon dried thyme
  • 1/2 cup shredded mozzarella cheese
  • 1/4 cup grated Parmesan cheese
  • 1 tablespoon balsamic vinegar
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the sliced onion and a pinch of salt. Cook, stirring occasionally, for about 15-20 minutes, or until the onions are golden brown and caramelized. Stir in the balsamic vinegar and cook for an additional 2 minutes. Remove from heat and set aside.
  3. In a food processor, combine the chopped walnuts, garlic powder, dried thyme, remaining salt, and black pepper. Pulse until the mixture resembles coarse crumbs.
  4. In a large oven-safe skillet, heat the remaining tablespoon of olive oil over medium-high heat. Season the chicken breasts with salt and pepper, then sear them for about 3-4 minutes on each side until golden brown.
  5. Remove the skillet from heat. Spread the caramelized onions evenly over the chicken breasts, then sprinkle the walnut mixture on top. Finish by adding the mozzarella and Parmesan cheese.
  6. Transfer the skillet to the preheated oven and bake for 20-25 minutes, or until the chicken is cooked through and the cheese is bubbly and golden.
  7. Remove from the oven and let it rest for 5 minutes before serving. Garnish with fresh parsley.

  • For a spicier kick, add a pinch of red pepper flakes to the walnut mixture.
