- 2 boneless, skinless chicken breasts (about 1 pound)
- 1 large onion, thinly sliced
- 1 cup walnuts, chopped
- 2 tablespoons olive oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon garlic powder
- 1 teaspoon dried thyme
- 1/2 cup shredded mozzarella cheese
- 1/4 cup grated Parmesan cheese
- 1 tablespoon balsamic vinegar
- Fresh parsley, chopped (for garnish)
Instructions
- Preheat the oven to 375°F (190°C).
- In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the sliced onion and a pinch of salt. Cook, stirring occasionally, for about 15-20 minutes, or until the onions are golden brown and caramelized. Stir in the balsamic vinegar and cook for an additional 2 minutes. Remove from heat and set aside.
- In a food processor, combine the chopped walnuts, garlic powder, dried thyme, remaining salt, and black pepper. Pulse until the mixture resembles coarse crumbs.
- In a large oven-safe skillet, heat the remaining tablespoon of olive oil over medium-high heat. Season the chicken breasts with salt and pepper, then sear them for about 3-4 minutes on each side until golden brown.
- Remove the skillet from heat. Spread the caramelized onions evenly over the chicken breasts, then sprinkle the walnut mixture on top. Finish by adding the mozzarella and Parmesan cheese.
- Transfer the skillet to the preheated oven and bake for 20-25 minutes, or until the chicken is cooked through and the cheese is bubbly and golden.
- Remove from the oven and let it rest for 5 minutes before serving. Garnish with fresh parsley.
Notes
- For a spicier kick, add a pinch of red pepper flakes to the walnut mixture.
- Substitute the chicken with pork chops or firm tofu for a different protein option. Adjust cooking times accordingly.
