  • 1 (8 oz) container whipped topping, thawed
  • 1 (16 oz) package graham crackers
  • 2 medium apples, peeled, cored, and diced
  • 1 cup caramel sauce, plus extra for drizzling
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon vanilla extract
  • 1/4 cup chopped pecans or walnuts (optional)

Instructions

  1. In a large mixing bowl, whisk together the milk and instant vanilla pudding mix until well combined. Let it sit for about 5 minutes until it thickens.
  2. Gently fold in the whipped topping until fully incorporated.
  3. In a separate bowl, combine the diced apples, caramel sauce, ground cinnamon, and vanilla extract. Mix until the apples are well coated.
  4. In a 9×13 inch baking dish, layer half of the graham crackers on the bottom.
  5. Spread half of the pudding mixture over the graham crackers, followed by half of the apple mixture.
  6. Repeat the layers with the remaining graham crackers, pudding mixture, and apple mixture.
  7. If using, sprinkle the chopped nuts on top.
  8. Cover the dish with plastic wrap and refrigerate for at least 4 hours, or overnight for best results.
  9. Before serving, drizzle additional caramel sauce over the top for garnish.
