Instructions
- In a medium bowl, combine graham cracker crumbs, granulated sugar, and melted butter. Mix until well combined.
- Divide the mixture evenly among 6 serving cups, pressing it down to form a crust layer.
- In a large mixing bowl, beat the softened cream cheese with an electric mixer until smooth.
- Gradually add powdered sugar and vanilla extract, mixing until well combined.
- In a separate bowl, whip the heavy cream until stiff peaks form.
- Gently fold the whipped cream into the cream cheese mixture until fully incorporated.
- In another bowl, toss the diced apples with lemon juice and cinnamon.
- Layer the apple mixture over the crust in each cup, followed by the cheesecake mixture.
- Refrigerate the cups for at least 2 hours to allow them to set.
- Before serving, drizzle caramel sauce over the top of each cheesecake cup.
