Description

A delicious and spicy Cajun Salmon Pasta that combines tender salmon with creamy sauce and pasta for a delightful meal.


Ingredients

  • 8 ounces fettuccine or linguine pasta
  • 2 tablespoons olive oil
  • 1 pound skinless salmon fillet
  • 2 teaspoons Cajun spice blend
  • 1 teaspoon garlic powder
  • 1/2 teaspoon sea salt
  • 1/4 teaspoon freshly ground black pepper
  • 1 cup heavy cream
  • 1/2 cup freshly grated Parmesan cheese
  • 1/2 cup halved cherry tomatoes
  • 1/4 cup freshly chopped parsley
  • Juice of half a lemon

Instructions

  1. Boil a pot of salted water and cook the pasta until al dente. Drain and keep warm, reserving half a cup of the cooking water.
  2. In a large skillet, heat olive oil over medium-high heat. Coat the salmon fillet with Cajun spice, garlic powder, sea salt, and black pepper.
  3. Place the salmon in the skillet and sear for 4-5 minutes on each side until cooked through. Remove and let rest.
  4. Lower the heat to medium and pour heavy cream into the skillet, stirring gently.
  5. Gradually mix in Parmesan cheese and let the sauce simmer for 2-3 minutes until it thickens slightly.
  6. Add cherry tomatoes and cook for an additional 2 minutes.
  7. Break the salmon into bite-sized chunks and return it to the skillet with the warm pasta.
  8. Combine all ingredients, adding reserved pasta water until the sauce reaches desired consistency.
  9. Finish with fresh lemon juice and garnish with chopped parsley before serving.

Notes

  • Adjust the amount of Cajun spice to taste for desired spiciness.
  • Can substitute salmon with shrimp or chicken if preferred.
  • For a lighter version, use half-and-half instead of heavy cream.
