A delicious and spicy Cajun Salmon Pasta that combines tender salmon with creamy sauce and pasta for a delightful meal.

- 8 ounces fettuccine or linguine pasta
- 2 tablespoons olive oil
- 1 pound skinless salmon fillet
- 2 teaspoons Cajun spice blend
- 1 teaspoon garlic powder
- 1/2 teaspoon sea salt
- 1/4 teaspoon freshly ground black pepper
- 1 cup heavy cream
- 1/2 cup freshly grated Parmesan cheese
- 1/2 cup halved cherry tomatoes
- 1/4 cup freshly chopped parsley
- Juice of half a lemon
Instructions
- Boil a pot of salted water and cook the pasta until al dente. Drain and keep warm, reserving half a cup of the cooking water.
- In a large skillet, heat olive oil over medium-high heat. Coat the salmon fillet with Cajun spice, garlic powder, sea salt, and black pepper.
- Place the salmon in the skillet and sear for 4-5 minutes on each side until cooked through. Remove and let rest.
- Lower the heat to medium and pour heavy cream into the skillet, stirring gently.
- Gradually mix in Parmesan cheese and let the sauce simmer for 2-3 minutes until it thickens slightly.
- Add cherry tomatoes and cook for an additional 2 minutes.
- Break the salmon into bite-sized chunks and return it to the skillet with the warm pasta.
- Combine all ingredients, adding reserved pasta water until the sauce reaches desired consistency.
- Finish with fresh lemon juice and garnish with chopped parsley before serving.
Notes
- Adjust the amount of Cajun spice to taste for desired spiciness.
- Can substitute salmon with shrimp or chicken if preferred.
- For a lighter version, use half-and-half instead of heavy cream.
