Ingredients

  • 2 cups graham cracker crumbs
  • 1/2 cup unsalted butter, melted
  • 1/4 cup granulated sugar
  • 3 (8-ounce) packages cream cheese, softened
  • 1 cup brown sugar, packed
  • 1 teaspoon vanilla extract
  • 3 large eggs
  • 1 cup butterscotch chips
  • 1/2 cup sour cream

Instructions

  1. Preheat your oven to 325°F (163°C). Grease a 9-inch springform pan with cooking spray or butter.
  2. In a medium bowl, combine graham cracker crumbs, melted butter, and granulated sugar. Mix until well combined. Press the mixture firmly into the bottom of the prepared springform pan to form the crust.
  3. In a large mixing bowl, beat the softened cream cheese with an electric mixer on medium speed until smooth and creamy.
  4. Gradually add the brown sugar and vanilla extract, mixing until fully incorporated.
  5. Add the eggs one at a time, mixing on low speed after each addition until just combined. Do not overmix.
  6. Melt the butterscotch chips in a microwave-safe bowl in 30-second intervals, stirring in between, until smooth. Allow to cool slightly, then fold the melted butterscotch into the cream cheese mixture.
  7. Pour the cream cheese mixture over the crust in the springform pan.
  8. Bake in the preheated oven for 55-60 minutes, or until the center is set but still slightly jiggly.
  9. Remove the cheesecake from the oven and let it cool at room temperature for about 1 hour.
  10. Once cooled, spread the sour cream evenly over the top of the cheesecake. Refrigerate for at least 4 hours, preferably overnight, before serving.

Notes

  • For a richer flavor, try adding a teaspoon of butterscotch extract to the cream cheese mixture.
  • You can also top the cheesecake with whipped cream and additional butterscotch chips or a drizzle of caramel sauce for an extra indulgent dessert.
