Description

A spicy and refreshing salad featuring grilled shrimp tossed in a zesty buffalo ranch dressing, perfect for a light meal or appetizer.

Ingredients

Scale
  • 1 pound large shrimp, peeled and deveined
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup romaine lettuce, chopped
  • 1 cup cherry tomatoes, halved
  • 1/2 cup cucumber, diced
  • 1/4 cup red onion, thinly sliced
  • 1/2 cup ranch dressing
  • 1/4 cup buffalo sauce
  • 1/4 cup crumbled blue cheese (optional)
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Preheat the grill or a grill pan over medium-high heat.
  2. In a bowl, toss the shrimp with olive oil, garlic powder, paprika, salt, and black pepper until evenly coated.
  3. Grill the shrimp for 2-3 minutes on each side, or until they turn pink and opaque. Remove from heat and set aside.
  4. In a large bowl, combine the chopped romaine lettuce, cherry tomatoes, cucumber, and red onion.
  5. In a small bowl, mix together the ranch dressing and buffalo sauce until well combined.
  6. Add the grilled shrimp to the salad mixture and drizzle with the ranch-buffalo dressing. Toss gently to combine.
  7. If desired, sprinkle crumbled blue cheese on top and garnish with fresh parsley.
  8. Serve immediately or chill in the refrigerator for 15-20 minutes before serving for a refreshing taste.

Notes

  • For a spicier kick, add more buffalo sauce to the dressing or toss the shrimp in additional sauce after grilling.
  • Substitute grilled chicken for shrimp or use a mix of both for a heartier salad.
