- 1 pound large shrimp, peeled and deveined
- 1 tablespoon olive oil
- 1 teaspoon garlic powder
- 1 teaspoon paprika
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 cup romaine lettuce, chopped
- 1 cup cherry tomatoes, halved
- 1/2 cup cucumber, diced
- 1/4 cup red onion, thinly sliced
- 1/2 cup ranch dressing
- 1/4 cup buffalo sauce
- 1/4 cup crumbled blue cheese (optional)
- Fresh parsley, chopped (for garnish)
Instructions
- Preheat the grill or a grill pan over medium-high heat.
- In a bowl, toss the shrimp with olive oil, garlic powder, paprika, salt, and black pepper until evenly coated.
- Grill the shrimp for 2-3 minutes on each side, or until they turn pink and opaque. Remove from heat and set aside.
- In a large bowl, combine the chopped romaine lettuce, cherry tomatoes, cucumber, and red onion.
- In a small bowl, mix together the ranch dressing and buffalo sauce until well combined.
- Add the grilled shrimp to the salad mixture and drizzle with the ranch-buffalo dressing. Toss gently to combine.
- If desired, sprinkle crumbled blue cheese on top and garnish with fresh parsley.
- Serve immediately or chill in the refrigerator for 15-20 minutes before serving for a refreshing taste.
Notes
- For a spicier kick, add more buffalo sauce to the dressing or toss the shrimp in additional sauce after grilling.
- Substitute grilled chicken for shrimp or use a mix of both for a heartier salad.
