A fresh and easy recipe for Bruschetta Pasta that combines the flavors of cherry tomatoes, basil, and garlic with penne pasta.

- 8 ounces penne pasta
- 2 cups cherry tomatoes, halved
- 1/4 cup fresh basil, chopped
- 3 cloves garlic, minced
- 1/4 cup extra virgin olive oil
- 1 teaspoon balsamic vinegar
- Salt and pepper to taste
- 1/4 cup grated Parmesan cheese (optional)
Instructions
- Cook the penne pasta according to package instructions in a large pot of salted boiling water until al dente. Drain and set aside, reserving 1/2 cup of the pasta water.
- In a large skillet over medium heat, add the olive oil. Once hot, add the minced garlic and sauté for about 1 minute until fragrant, being careful not to burn it.
- Add the halved cherry tomatoes to the skillet and cook for 5-7 minutes, stirring occasionally, until they begin to soften and release their juices.
- Stir in the cooked penne pasta, chopped basil, balsamic vinegar, and reserved pasta water. Mix well to combine and heat through for about 2-3 minutes. Season with salt and pepper to taste.
- Serve immediately, topped with grated Parmesan cheese if desired.
Notes
- For added protein, consider adding grilled chicken or shrimp to the pasta.
- You can substitute the cherry tomatoes with diced Roma tomatoes or sun-dried tomatoes for a different flavor profile.
