Description

Ingredients

  • 8 ounces penne pasta
  • 2 cups cherry tomatoes, halved
  • 1/4 cup fresh basil, chopped
  • 3 cloves garlic, minced
  • 1/4 cup extra virgin olive oil
  • 1 teaspoon balsamic vinegar
  • Salt and pepper to taste
  • 1/4 cup grated Parmesan cheese (optional)

Instructions

  1. Cook the penne pasta according to package instructions in a large pot of salted boiling water until al dente. Drain and set aside, reserving 1/2 cup of the pasta water.
  2. In a large skillet over medium heat, add the olive oil. Once hot, add the minced garlic and sauté for about 1 minute until fragrant, being careful not to burn it.
  3. Add the halved cherry tomatoes to the skillet and cook for 5-7 minutes, stirring occasionally, until they begin to soften and release their juices.
  4. Stir in the cooked penne pasta, chopped basil, balsamic vinegar, and reserved pasta water. Mix well to combine and heat through for about 2-3 minutes. Season with salt and pepper to taste.
  5. Serve immediately, topped with grated Parmesan cheese if desired.
