Ingredients

  • 3 cups cooked, shredded chicken
  • 1 cup cherry tomatoes, halved
  • 1 cup fresh basil, chopped
  • 1 cup mozzarella cheese, shredded
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup balsamic vinegar
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 tablespoon olive oil
  • 1 cup cooked pasta (penne or rotini)

Instructions

  1. Preheat the oven to 375°F.
  2. In a large mixing bowl, combine the cooked chicken, cherry tomatoes, basil, mozzarella cheese, Parmesan cheese, balsamic vinegar, garlic powder, onion powder, salt, and black pepper. Mix until well combined.
  3. Add the cooked pasta to the chicken mixture and stir to combine.
  4. Drizzle the olive oil into a 9×13-inch baking dish. Pour the chicken and pasta mixture into the dish, spreading it evenly.
  5. Cover the dish with aluminum foil and bake for 25 minutes.
  6. Remove the foil and bake for an additional 10-15 minutes, or until the cheese is bubbly and golden brown.
  7. Let the casserole cool for 5 minutes before serving.

Notes

  • For a creamier texture, add 1/2 cup of cream cheese to the mixture before baking.
  • To make it a vegetarian dish, substitute the chicken with 2 cups of sautéed mushrooms and bell peppers.
