- 3 cups cooked, shredded chicken
- 1 cup cherry tomatoes, halved
- 1 cup fresh basil, chopped
- 1 cup mozzarella cheese, shredded
- 1/2 cup grated Parmesan cheese
- 1/4 cup balsamic vinegar
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 tablespoon olive oil
- 1 cup cooked pasta (penne or rotini)
Instructions
- Preheat the oven to 375°F.
- In a large mixing bowl, combine the cooked chicken, cherry tomatoes, basil, mozzarella cheese, Parmesan cheese, balsamic vinegar, garlic powder, onion powder, salt, and black pepper. Mix until well combined.
- Add the cooked pasta to the chicken mixture and stir to combine.
- Drizzle the olive oil into a 9×13-inch baking dish. Pour the chicken and pasta mixture into the dish, spreading it evenly.
- Cover the dish with aluminum foil and bake for 25 minutes.
- Remove the foil and bake for an additional 10-15 minutes, or until the cheese is bubbly and golden brown.
- Let the casserole cool for 5 minutes before serving.
Notes
- For a creamier texture, add 1/2 cup of cream cheese to the mixture before baking.
- To make it a vegetarian dish, substitute the chicken with 2 cups of sautéed mushrooms and bell peppers.
