  • 1 pint of your favorite ice cream (softened)

Instructions

  1. Preheat your oven to 350°F. Grease a 9×13-inch baking pan or line it with parchment paper for easy removal.
  2. In a large mixing bowl, melt the butter in the microwave or on the stovetop. Stir in the granulated sugar until well combined.
  3. Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.
  4. In a separate bowl, whisk together the flour, cocoa powder, salt, and baking powder.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Do not overmix.
  6. Pour the brownie batter into the prepared baking pan, spreading it evenly. Bake for 20-25 minutes or until a toothpick inserted in the center comes out with a few moist crumbs.
  7. Let the brownies cool completely in the pan.
  8. Once cooled, remove the brownies from the pan and cut them into squares.
  9. Take one brownie square, add a scoop of softened ice cream on top, and then place another brownie square on top to create a sandwich. Repeat until all brownies are used.
  10. For best results, place the assembled ice cream sandwiches in the freezer for at least 30 minutes to firm up before serving.
