- 1 ½ cups graham cracker crumbs
- ½ cup unsweetened cocoa powder
- ½ cup granulated sugar
- ½ cup unsalted butter, melted
- 2 (8-ounce) packages cream cheese, softened
- 1 cup granulated sugar
- 3 large eggs
- 1 teaspoon vanilla extract
- 1 cup sour cream
- ½ cup caramel sauce, plus extra for drizzling
- 1 cup semi-sweet chocolate chips
Instructions
- Preheat the oven to 325°F. Grease a 9-inch springform pan.
- In a medium bowl, combine graham cracker crumbs, cocoa powder, sugar, and melted butter. Mix until well combined.
- Press the mixture firmly into the bottom of the prepared pan to form the crust. Bake for 10 minutes, then remove from the oven and let cool.
- In a large mixing bowl, beat the softened cream cheese and sugar together until smooth and creamy.
- Add the eggs one at a time, mixing well after each addition.
- Stir in the vanilla extract and sour cream until fully incorporated.
- Gently fold in the chocolate chips and ½ cup of caramel sauce.
- Pour the cheesecake batter over the cooled brownie crust, spreading it evenly.
- Bake for 50-60 minutes, or until the edges are set and the center is slightly jiggly.
- Turn off the oven and leave the cheesecake inside for an additional hour to cool gradually.
- Remove the cheesecake from the oven and let it cool to room temperature.
- Once cooled, refrigerate for at least 4 hours or overnight for best results.
- Before serving, drizzle additional caramel sauce over the top.
Notes
- For a richer flavor, use dark chocolate chips instead of semi-sweet.
- To add a nutty crunch, sprinkle chopped pecans or walnuts on top of the cheesecake before drizzling with caramel.
