Ingredients

  • ½ cup unsweetened cocoa powder
  • ½ cup granulated sugar
  • ½ cup unsalted butter, melted
  • 2 (8-ounce) packages cream cheese, softened
  • 1 cup granulated sugar
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup sour cream
  • ½ cup caramel sauce, plus extra for drizzling
  • 1 cup semi-sweet chocolate chips

Instructions

  1. Preheat the oven to 325°F. Grease a 9-inch springform pan.
  2. In a medium bowl, combine graham cracker crumbs, cocoa powder, sugar, and melted butter. Mix until well combined.
  3. Press the mixture firmly into the bottom of the prepared pan to form the crust. Bake for 10 minutes, then remove from the oven and let cool.
  4. In a large mixing bowl, beat the softened cream cheese and sugar together until smooth and creamy.
  5. Add the eggs one at a time, mixing well after each addition.
  6. Stir in the vanilla extract and sour cream until fully incorporated.
  7. Gently fold in the chocolate chips and ½ cup of caramel sauce.
  8. Pour the cheesecake batter over the cooled brownie crust, spreading it evenly.
  9. Bake for 50-60 minutes, or until the edges are set and the center is slightly jiggly.
  10. Turn off the oven and leave the cheesecake inside for an additional hour to cool gradually.
  11. Remove the cheesecake from the oven and let it cool to room temperature.
  12. Once cooled, refrigerate for at least 4 hours or overnight for best results.
  13. Before serving, drizzle additional caramel sauce over the top.

  • For a richer flavor, use dark chocolate chips instead of semi-sweet.
