Description

Delicious mini cheesecakes with a rich brownie bottom, perfect for satisfying your sweet tooth.

Ingredients

Scale
  • 1 cup semi-sweet chocolate chips
  • 1/2 cup unsalted butter
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup all-purpose flour
  • 1/4 teaspoon salt
  • 8 ounces cream cheese, softened
  • 1/2 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1 large egg
  • 1/2 cup sour cream

Instructions

  1. Preheat the oven to 325°F. Line a 12-cup muffin tin with paper liners.
  2. In a medium saucepan over low heat, melt the chocolate chips and butter together, stirring until smooth. Remove from heat and let cool slightly.
  3. In a large mixing bowl, combine the melted chocolate mixture with granulated sugar, eggs, and 1 teaspoon vanilla extract. Mix until well combined. Stir in flour and salt until just incorporated.
  4. Divide the brownie batter evenly among the muffin cups, filling each about halfway. Bake for 10 minutes, then remove from the oven and let cool slightly.
  5. In a separate bowl, beat together the softened cream cheese, powdered sugar, 1 teaspoon vanilla extract, and 1 egg until smooth. Add the sour cream and mix until fully combined.
  6. Spoon the cheesecake mixture over the brownie layer in each muffin cup, filling them to the top. Bake for an additional 15-18 minutes, or until the cheesecake is set but still slightly jiggly in the center.
  7. Remove from the oven and let cool at room temperature for about 30 minutes. Transfer to the refrigerator and chill for at least 2 hours before serving.

Notes

  • For a richer chocolate flavor, consider adding a tablespoon of cocoa powder to the brownie batter.
  • You can also top each cheesecake with fresh berries or a drizzle of chocolate sauce for added flair.
