- 2 large whole wheat tortillas
- 4 large eggs
- 1 cup grated mozzarella cheese
- 1/2 cup cooked and crumbled turkey bacon (or diced ham)
- 1/4 cup chopped spinach
- 1/4 cup chopped tomatoes
- 1 tablespoon avocado oil
- Salt and pepper to taste
- Guacamole and hot sauce for serving (optional)
Instructions
- In a bowl, beat the eggs together with salt and pepper until well combined. Set aside for later use.
- In a skillet, heat the avocado oil over medium heat. Add the chopped tomatoes and spinach, cooking until the spinach wilts and the tomatoes soften, about 2-3 minutes.
- Stir in the crumbled turkey bacon (or ham) and cook for another minute to warm through.
- Pour the beaten eggs into the skillet, stirring continuously until the eggs are scrambled and cooked to your liking, approximately 3-4 minutes. Remove from heat.
- Take one tortilla and lay it flat in a separate skillet over medium heat. Sprinkle half of the mozzarella cheese on one side of the tortilla.
- Spoon half of the egg and vegetable mixture onto the cheese, then fold the tortilla over to create a half-moon shape. Cook for about 2-3 minutes on each side until the tortilla is crispy and the cheese has melted.
- Repeat the process with the second tortilla and remaining ingredients.
- Slice each wrap into halves or quarters and serve warm with guacamole and hot sauce if desired.
Notes
- For an extra flavor boost, toss in some diced bell peppers or a sprinkle of your favorite herbs.
- To make it dairy-free, substitute the cheese with a plant-based alternative.
