Description

Savory Breakfast Wraps filled with eggs, cheese, and turkey bacon, perfect for a hearty morning meal.


Ingredients

  • 2 large whole wheat tortillas
  • 4 large eggs
  • 1 cup grated mozzarella cheese
  • 1/2 cup cooked and crumbled turkey bacon (or diced ham)
  • 1/4 cup chopped spinach
  • 1/4 cup chopped tomatoes
  • 1 tablespoon avocado oil
  • Salt and pepper to taste
  • Guacamole and hot sauce for serving (optional)

Instructions

  1. In a bowl, beat the eggs together with salt and pepper until well combined. Set aside for later use.
  2. In a skillet, heat the avocado oil over medium heat. Add the chopped tomatoes and spinach, cooking until the spinach wilts and the tomatoes soften, about 2-3 minutes.
  3. Stir in the crumbled turkey bacon (or ham) and cook for another minute to warm through.
  4. Pour the beaten eggs into the skillet, stirring continuously until the eggs are scrambled and cooked to your liking, approximately 3-4 minutes. Remove from heat.
  5. Take one tortilla and lay it flat in a separate skillet over medium heat. Sprinkle half of the mozzarella cheese on one side of the tortilla.
  6. Spoon half of the egg and vegetable mixture onto the cheese, then fold the tortilla over to create a half-moon shape. Cook for about 2-3 minutes on each side until the tortilla is crispy and the cheese has melted.
  7. Repeat the process with the second tortilla and remaining ingredients.
  8. Slice each wrap into halves or quarters and serve warm with guacamole and hot sauce if desired.

Notes

  • For an extra flavor boost, toss in some diced bell peppers or a sprinkle of your favorite herbs.
