A delicious and customizable Breakfast Crunchwrap filled with scrambled eggs, sausage, cheese, and fresh vegetables, perfect for a hearty breakfast.

- 2 large flour tortillas
- 4 large eggs
- 1/4 cup milk
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 cup cooked breakfast sausage, crumbled (or bacon)
- 1 cup shredded cheddar cheese
- 1/2 cup diced tomatoes
- 1/2 cup shredded lettuce
- 1/4 cup salsa
- 1 tablespoon olive oil
Instructions
- In a bowl, whisk together the eggs, milk, salt, and black pepper until well combined.
- In a skillet over medium heat, add the olive oil. Once hot, pour in the egg mixture and scramble until fully cooked, about 3-4 minutes. Remove from heat.
- Lay one tortilla flat on a clean surface. In the center, layer 1/4 of the scrambled eggs, 1/4 of the sausage, 1/4 cup cheese, 2 tablespoons diced tomatoes, and 2 tablespoons shredded lettuce. Top with a spoonful of salsa.
- Fold the sides of the tortilla inwards, then roll it up from the bottom to create a wrap. Repeat with the second tortilla and remaining ingredients.
- Wipe the skillet clean and return it to medium heat. Place the crunchwrap seam-side down in the skillet and cook for 2-3 minutes until golden brown. Flip and cook the other side for another 2-3 minutes.
- Remove from the skillet, slice in half, and serve warm.
Notes
- For a vegetarian option, substitute the sausage with black beans or sautéed vegetables.
- Add avocado slices or guacamole for extra creaminess and flavor.
