  • 1 pound boneless, skinless chicken breasts, cut into bite-sized pieces

  • 1 teaspoon onion powder
  • Salt and pepper, to taste
  • 1 cup orzo pasta
  • 4 cups chicken broth
  • 8 ounces Boursin cheese (garlic and herb flavor)
  • 1 cup spinach, chopped
  • 1/2 cup cherry tomatoes, halved
  • 1/4 cup grated Parmesan cheese
  • Fresh parsley, chopped (for garnish)

Instructions

  1. In a large skillet, heat the olive oil over medium heat. Add the chicken pieces and season with garlic powder, onion powder, salt, and pepper. Cook until the chicken is browned and cooked through, about 5-7 minutes. Remove the chicken from the skillet and set aside.
  2. In the same skillet, add the orzo and toast it for about 2 minutes, stirring frequently.
  3. Pour in the chicken broth and bring to a boil. Reduce the heat to a simmer, cover, and cook for about 10-12 minutes or until the orzo is tender and has absorbed most of the liquid.
  4. Stir in the Boursin cheese until melted and creamy. Add the cooked chicken back into the skillet along with the chopped spinach and cherry tomatoes. Cook for an additional 2-3 minutes until the spinach is wilted.
  5. Remove from heat and stir in the grated Parmesan cheese. Adjust seasoning if needed.
  6. Serve warm, garnished with fresh parsley.
