  • 1 ½ cups graham cracker crumbs
  • ½ cup unsalted butter, melted
  • 2 tablespoons granulated sugar
  • 3 (8-ounce) packages cream cheese, softened
  • 1 cup granulated sugar
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • ½ cup sour cream
  • ¼ cup bourbon
  • 1 cup caramel sauce (store-bought or homemade)
  • Sea salt for garnish

Instructions

  1. Preheat the oven to 325°F.
  2. In a medium bowl, combine graham cracker crumbs, melted butter, and 2 tablespoons of sugar. Mix until well combined.
  3. Press the mixture firmly into the bottom of a 9-inch springform pan to create the crust. Bake for 10 minutes, then remove from the oven and let cool.
  4. In a large mixing bowl, beat the softened cream cheese with 1 cup of sugar until smooth and creamy.
  5. Add the eggs one at a time, mixing well after each addition.
  6. Stir in the vanilla extract, sour cream, and bourbon until fully incorporated.
  7. Pour half of the cheesecake batter over the cooled crust. Drizzle half of the caramel sauce over the batter, then pour the remaining cheesecake batter on top.
  8. Finish by drizzling the remaining caramel sauce over the top. Use a knife to swirl the caramel into the batter gently.
  9. Bake the cheesecake in the preheated oven for 55-60 minutes, or until the center is set but still slightly jiggly.
  10. Turn off the oven and crack the door open, allowing the cheesecake to cool in the oven for 1 hour to prevent cracking.
  11. Remove the cheesecake from the oven and let it cool to room temperature.
  12. Refrigerate for at least 4 hours, preferably overnight, before serving.
  13. Before serving, sprinkle a pinch of sea salt on top for added flavor.
