- 1 large onion, chopped
- 3 cloves garlic, minced
- 2 medium carrots, diced
- 2 medium celery stalks, diced
- 1 bell pepper, chopped
- 1 pound boneless chicken thighs, cut into bite-sized pieces
- 1 pound smoked sausage, sliced
- 4 cups chicken broth
- 1 can (14.5 ounces) diced tomatoes, undrained
- 2 cups frozen corn
- 2 cups frozen green beans
- 1 teaspoon dried thyme
- 1 teaspoon dried oregano
- Salt and pepper to taste
- 2 cups cooked rice (optional, for serving)
- Chopped fresh parsley for garnish (optional)
Instructions
- In a large pot, heat the vegetable oil over medium heat. Add the chopped onion and garlic, sautéing until the onion is translucent, about 5 minutes.
- Stir in the carrots, celery, and bell pepper. Cook for an additional 5 minutes until the vegetables begin to soften.
- Add the chicken thighs and smoked sausage to the pot. Cook until the chicken is browned on all sides, about 5-7 minutes.
- Pour in the chicken broth and add the diced tomatoes, corn, green beans, thyme, oregano, salt, and pepper. Bring the mixture to a boil.
- Reduce the heat and let the soup simmer for 30-40 minutes, stirring occasionally, until the chicken is cooked through and the flavors meld together.
- If using, stir in the cooked rice just before serving. Adjust seasoning if necessary.
- Ladle the soup into bowls and garnish with fresh parsley if desired.

- For a spicier kick, add 1-2 diced jalapeños or a teaspoon of red pepper flakes when sautéing the vegetables.
