Ingredients

  • 2 medium carrots, diced

  • 1 pound boneless chicken thighs, cut into bite-sized pieces
  • 1 pound smoked sausage, sliced
  • 4 cups chicken broth
  • 1 can (14.5 ounces) diced tomatoes, undrained
  • 2 cups frozen corn
  • 2 cups frozen green beans
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
  • 2 cups cooked rice (optional, for serving)
  • Chopped fresh parsley for garnish (optional)

Instructions

  1. In a large pot, heat the vegetable oil over medium heat. Add the chopped onion and garlic, sautéing until the onion is translucent, about 5 minutes.
  2. Stir in the carrots, celery, and bell pepper. Cook for an additional 5 minutes until the vegetables begin to soften.
  3. Add the chicken thighs and smoked sausage to the pot. Cook until the chicken is browned on all sides, about 5-7 minutes.
  4. Pour in the chicken broth and add the diced tomatoes, corn, green beans, thyme, oregano, salt, and pepper. Bring the mixture to a boil.
  5. Reduce the heat and let the soup simmer for 30-40 minutes, stirring occasionally, until the chicken is cooked through and the flavors meld together.
  6. If using, stir in the cooked rice just before serving. Adjust seasoning if necessary.
  7. Ladle the soup into bowls and garnish with fresh parsley if desired.
