A delightful Blueberry Crumble Cheesecake recipe that combines a creamy cheesecake filling with a crunchy oat topping and fresh blueberries.

- 1 ½ cups graham cracker crumbs
- ½ cup unsalted butter, melted
- 2 tablespoons granulated sugar
- 2 (8-ounce) packages cream cheese, softened
- ¾ cup granulated sugar
- 1 teaspoon vanilla extract
- 2 large eggs
- 1 cup fresh blueberries
- 1 tablespoon cornstarch
- ½ teaspoon lemon juice
- 1 cup rolled oats
- ½ cup brown sugar
- ½ teaspoon cinnamon
Instructions
- Preheat the oven to 325°F.
- In a medium bowl, combine graham cracker crumbs, melted butter, and 2 tablespoons of granulated sugar. Press the mixture firmly into the bottom of a 9-inch springform pan to form the crust.
- Bake for 10 minutes, then remove from the oven and let cool.
- In a large mixing bowl, beat the softened cream cheese with ¾ cup of granulated sugar and vanilla extract until smooth and creamy.
- Add the eggs one at a time, mixing well after each addition.
- In a separate bowl, toss the blueberries with cornstarch and lemon juice. Gently fold the blueberries into the cream cheese mixture.
- Pour the cream cheese and blueberry mixture over the cooled crust in the springform pan.
- In another bowl, combine rolled oats, brown sugar, and cinnamon. Sprinkle the oat mixture evenly over the cheesecake filling.
- Bake the cheesecake for 45-50 minutes or until the center is set but still slightly jiggly.
- Turn off the oven and leave the cheesecake inside for an additional 30 minutes.
- Remove from the oven and let cool to room temperature. Once cooled, refrigerate for at least 4 hours or overnight before serving.
Notes
- For a richer flavor, try adding a teaspoon of almond extract to the cream cheese mixture.
- You can substitute the blueberries with raspberries or strawberries for a different fruit twist.
