Ingredients

  • 1 ½ cups graham cracker crumbs
  • ½ cup unsalted butter, melted
  • 2 tablespoons granulated sugar
  • 2 (8-ounce) packages cream cheese, softened
  • ¾ cup granulated sugar
  • 1 teaspoon vanilla extract
  • 2 large eggs
  • 1 cup fresh blueberries
  • 1 tablespoon cornstarch
  • ½ teaspoon lemon juice
  • 1 cup rolled oats
  • ½ cup brown sugar
  • ½ teaspoon cinnamon

Instructions

  1. Preheat the oven to 325°F.
  2. In a medium bowl, combine graham cracker crumbs, melted butter, and 2 tablespoons of granulated sugar. Press the mixture firmly into the bottom of a 9-inch springform pan to form the crust.
  3. Bake for 10 minutes, then remove from the oven and let cool.
  4. In a large mixing bowl, beat the softened cream cheese with ¾ cup of granulated sugar and vanilla extract until smooth and creamy.
  5. Add the eggs one at a time, mixing well after each addition.
  6. In a separate bowl, toss the blueberries with cornstarch and lemon juice. Gently fold the blueberries into the cream cheese mixture.
  7. Pour the cream cheese and blueberry mixture over the cooled crust in the springform pan.
  8. In another bowl, combine rolled oats, brown sugar, and cinnamon. Sprinkle the oat mixture evenly over the cheesecake filling.
  9. Bake the cheesecake for 45-50 minutes or until the center is set but still slightly jiggly.
  10. Turn off the oven and leave the cheesecake inside for an additional 30 minutes.
  11. Remove from the oven and let cool to room temperature. Once cooled, refrigerate for at least 4 hours or overnight before serving.

Notes

  • For a richer flavor, try adding a teaspoon of almond extract to the cream cheese mixture.
