Biscoff Banana Pudding is a delicious dessert that combines the flavors of ripe bananas and Biscoff cookies in a creamy pudding.


Ingredients

Scale
  • 2 cups whole milk
  • 1 cup heavy cream
  • 1/2 cup granulated sugar
  • 1/4 cup cornstarch
  • 1/4 teaspoon salt
  • 1 teaspoon vanilla extract
  • 3 ripe bananas, sliced
  • 1 cup Biscoff cookies, crushed
  • 1/2 cup Biscoff spread

Instructions

  1. In a medium saucepan, whisk together the milk, heavy cream, sugar, cornstarch, and salt over medium heat.
  2. Continue to whisk until the mixture thickens and begins to bubble, about 5-7 minutes.
  3. Remove from heat and stir in the vanilla extract.
  4. In a 9×9 inch baking dish, layer half of the sliced bananas on the bottom.
  5. Pour half of the pudding mixture over the bananas.
  6. Sprinkle half of the crushed Biscoff cookies on top.
  7. Repeat the layers with the remaining bananas, pudding, and cookies.
  8. Dollop the Biscoff spread on top of the final layer and gently swirl it into the pudding with a knife for a marbled effect.
  9. Cover the dish with plastic wrap and refrigerate for at least 4 hours, or overnight for best results.
  10. Serve chilled, and enjoy!

Notes

  • For a chocolate twist, add a layer of chocolate pudding between the banana layers.
  • You can also substitute the Biscoff cookies with graham crackers for a different flavor profile.
