Description

Biscoff Banana Pudding with Caramel is a delicious and indulgent dessert that combines creamy banana pudding with the unique flavor of Biscoff cookies and a rich caramel sauce.

Ingredients

Scale
  • 2 cups whole milk
  • 1 cup heavy cream
  • 1/2 cup granulated sugar
  • 1/4 cup cornstarch
  • 1/4 teaspoon salt
  • 1 teaspoon vanilla extract
  • 4 ripe bananas, sliced
  • 1 cup Biscoff cookies, crushed
  • 1/2 cup caramel sauce (store-bought or homemade)
  • Additional Biscoff cookies for garnish

Instructions

  1. In a medium saucepan, whisk together the milk, heavy cream, sugar, cornstarch, and salt over medium heat. Continue whisking until the mixture begins to thicken and bubble, about 5-7 minutes.
  2. Remove the saucepan from heat and stir in the vanilla extract. Allow the pudding to cool for about 10 minutes.
  3. In a 9×9-inch dish or a trifle bowl, layer half of the crushed Biscoff cookies on the bottom.
  4. Add half of the sliced bananas on top of the cookies.
  5. Pour half of the pudding mixture over the bananas.
  6. Drizzle with half of the caramel sauce.
  7. Repeat the layers with the remaining cookies, bananas, pudding, and caramel sauce.
  8. Cover the dish with plastic wrap and refrigerate for at least 4 hours, or overnight for best results.
  9. Before serving, crush additional Biscoff cookies for garnish and sprinkle them on top of the pudding. Drizzle with extra caramel sauce if desired.

Notes

  • For a lighter version, substitute half of the heavy cream with additional milk.
  • For added flavor, consider mixing in a teaspoon of cinnamon or nutmeg into the pudding mixture.
