- 2 cups shredded birria beef, cooked
- 1 cup shredded mozzarella cheese
- 1 cup shredded pepper jack cheese
- 1/2 cup marinara sauce
- 4 large flour tortillas
- 1 tablespoon extra virgin olive oil
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon dried oregano
- 1/2 teaspoon red pepper flakes (optional)
- Fresh cilantro, chopped (for garnish)
- Lime wedges (for serving)
Instructions
- Heat a large skillet over medium heat and add the olive oil.
- Lay one tortilla flat in the skillet and spread a generous layer of marinara sauce on top.
- Distribute half of the shredded birria beef evenly over the sauce.
- Top with a mix of mozzarella and pepper jack cheese.
- Sprinkle garlic powder, onion powder, oregano, and optional red pepper flakes over the filling.
- Carefully place another tortilla on top and press down gently.
- Cook for about 4-5 minutes until the bottom is crispy and the cheese melts.
- Using a spatula, flip the quesadilla and cook the other side for another 4-5 minutes until golden-brown.
- Transfer to a cutting board and let it rest before slicing into wedges.
- Garnish with fresh cilantro and serve with lime wedges.
Notes
- For an extra kick, consider adding sliced jalapeños inside the quesadilla.
- You can swap the birria beef for shredded chicken or roasted veggies for different flavors.
