  • 1 teaspoon onion powder
  • 1 teaspoon dried oregano
  • 1/2 teaspoon red pepper flakes (optional)
  • Fresh cilantro, chopped (for garnish)
  • Lime wedges (for serving)

Instructions

  1. Heat a large skillet over medium heat and add the olive oil.
  2. Lay one tortilla flat in the skillet and spread a generous layer of marinara sauce on top.
  3. Distribute half of the shredded birria beef evenly over the sauce.
  4. Top with a mix of mozzarella and pepper jack cheese.
  5. Sprinkle garlic powder, onion powder, oregano, and optional red pepper flakes over the filling.
  6. Carefully place another tortilla on top and press down gently.
  7. Cook for about 4-5 minutes until the bottom is crispy and the cheese melts.
  8. Using a spatula, flip the quesadilla and cook the other side for another 4-5 minutes until golden-brown.
