Description

A delicious and easy recipe for shoyu chicken, featuring tender chicken thighs marinated in a flavorful soy sauce mixture.


Ingredients

  • 2 pounds bone-in, skin-on chicken thighs
  • 1 cup soy sauce
  • 1/2 cup brown sugar
  • 1/2 cup water
  • 1/4 cup rice vinegar
  • 4 cloves garlic, minced
  • 1 tablespoon fresh ginger, grated
  • 1 teaspoon sesame oil
  • 1/2 teaspoon black pepper
  • 2 green onions, sliced (for garnish)
  • Sesame seeds (for garnish, optional)

Instructions

  1. In a large bowl, whisk together the soy sauce, brown sugar, water, rice vinegar, garlic, ginger, sesame oil, and black pepper until the sugar is dissolved.
  2. Add the chicken thighs to the marinade, ensuring they are well coated. Cover and refrigerate for at least 1 hour, or up to overnight for better flavor.
  3. Preheat your oven to 375°F (190°C).
  4. Remove the chicken from the marinade and place it in a baking dish. Reserve the marinade for later use.
  5. Bake the chicken in the preheated oven for 30 minutes.
  6. While the chicken is baking, pour the reserved marinade into a saucepan and bring it to a boil over medium heat. Reduce the heat and let it simmer for about 10 minutes until slightly thickened.
  7. After 30 minutes, remove the chicken from the oven and brush it with some of the thickened marinade. Return it to the oven and bake for an additional 15-20 minutes, or until the internal temperature reaches 165°F (75°C).
  8. Once cooked, remove the chicken from the oven and let it rest for 5 minutes. Garnish with sliced green onions and sesame seeds, if desired.

Notes

  • For a spicier version, add 1-2 teaspoons of red pepper flakes to the marinade.
  • Serve the shoyu chicken over steamed rice or with stir-fried vegetables for a complete meal.
