  • 1 cup diced celery
  • 1/2 cup diced red bell pepper
  • 1/2 cup diced red onion
  • 1/2 cup sweet pickle relish
  • 2 hard-boiled eggs, chopped
  • 1/4 cup chopped fresh parsley

Instructions

  1. Cook the elbow macaroni according to package instructions until al dente. Drain and rinse under cold water to cool. Set aside.
  2. In a large mixing bowl, combine the mayonnaise, apple cider vinegar, Dijon mustard, sugar, salt, and black pepper. Whisk until smooth and well combined.
  3. Add the cooled macaroni, diced celery, diced red bell pepper, diced red onion, sweet pickle relish, and chopped hard-boiled eggs to the bowl. Stir gently until all ingredients are evenly coated with the dressing.
  4. Fold in the chopped parsley for added freshness.
  5. Cover the salad and refrigerate for at least 1 hour to allow the flavors to meld. Serve chilled.
