Description
A delicious and creamy fruit salad that combines the flavors of cheesecake with fresh fruits, perfect for any gathering.
Ingredients
Scale
- 2 (8-ounce) packages cream cheese, softened
- 1 cup powdered sugar
- 1 teaspoon vanilla extract
- 1 (8-ounce) container whipped topping (like Cool Whip)
- 2 cups mini marshmallows
- 2 cups strawberries, hulled and sliced
- 2 cups blueberries
- 2 cups pineapple chunks, drained
- 1 cup chopped pecans or walnuts (optional)
Instructions
- In a large mixing bowl, beat the softened cream cheese with an electric mixer until smooth.
- Gradually add the powdered sugar and vanilla extract, mixing until well combined and creamy.
- Gently fold in the whipped topping until fully incorporated.
- Add the mini marshmallows, strawberries, blueberries, pineapple chunks, and chopped nuts (if using) to the cream cheese mixture.
- Stir gently until all the ingredients are evenly coated with the cream cheese mixture.
- Cover the bowl with plastic wrap and refrigerate for at least 2 hours to allow the flavors to meld and the salad to chill.
- Serve chilled in individual bowls or on a large serving platter.
Notes
- For a lighter version, substitute the cream cheese with Greek yogurt and reduce the powdered sugar to ½ cup.
- You can also add other fruits like kiwi or mango for a tropical twist.
- For a crunchier texture, consider adding granola on top just before serving.
