Berry Swirl Cheesecake Bites are a delightful dessert featuring a creamy cheesecake filling swirled with a berry mixture, all nestled in a mini graham cracker crust.

- 8 ounces cream cheese, softened
- 1/2 cup granulated sugar
- 1 teaspoon vanilla extract
- 1 large egg
- 1/4 cup sour cream
- 1/2 cup mixed berries (strawberries, blueberries, raspberries)
- 2 tablespoons honey or maple syrup
- 1/2 teaspoon lemon juice
- 1/4 teaspoon salt
- 1 package (12-count) mini graham cracker crusts
Instructions
- Preheat the oven to 325°F. Line a muffin tin with mini cupcake liners or spray with non-stick cooking spray.
- In a medium bowl, beat the softened cream cheese with an electric mixer until smooth. Add the granulated sugar, vanilla extract, and salt, mixing until well combined.
- Add the egg and sour cream to the cream cheese mixture, and beat until smooth and creamy.
- In a separate small bowl, combine the mixed berries, honey or maple syrup, and lemon juice. Mash the berries slightly with a fork to create a chunky sauce.
- Spoon the cheesecake mixture evenly into the mini graham cracker crusts, filling each about 3/4 full.
- Drop spoonfuls of the berry mixture on top of the cheesecake batter in each crust. Use a toothpick or skewer to gently swirl the berry mixture into the cheesecake batter.
- Bake for 15-18 minutes, or until the cheesecake bites are set but still slightly jiggly in the center. Remove from the oven and allow to cool at room temperature for 10 minutes, then transfer to the refrigerator to chill for at least 2 hours before serving.
Notes
- For a lighter version, substitute the cream cheese with Greek yogurt and reduce the sugar.
- You can use a variety of fruits like peaches or cherries to create different flavors.
- For an extra crunch, sprinkle some crushed nuts on top before baking.
