Instructions

  1. Preheat your oven to 375°F. Line a 15×10-inch jelly roll pan with parchment paper and lightly grease it.
  2. In a medium bowl, whisk together the flour, baking powder, and salt. Set aside.
  3. In a large bowl, beat the eggs and granulated sugar with an electric mixer on high speed for about 5 minutes, until thick and pale. Mix in the vanilla extract.
  4. Gradually fold the flour mixture into the egg mixture until just combined. In a small bowl, combine the milk and melted butter, then gently fold this into the batter.
  5. Spread the batter evenly in the prepared pan. Bake for 12-15 minutes, or until the cake springs back when lightly touched.
  6. While the cake is baking, prepare a clean kitchen towel by dusting it with powdered sugar. Once the cake is done, immediately invert it onto the towel and peel off the parchment paper. Roll the cake up in the towel, starting from the short end. Let it cool completely.
  7. In a medium bowl, beat the heavy cream, powdered sugar, and vanilla extract until stiff peaks form.
  8. Once the cake is cool, unroll it carefully. Spread the whipped cream over the cake, leaving a small border around the edges. Evenly distribute the sliced strawberries and blueberries on top of the cream.
  9. Roll the cake back up without the towel, starting from the short end. Wrap it in plastic wrap and refrigerate for at least 1 hour before serving.
  10. Slice the cake roll into pieces and serve chilled.
