- 1 ½ pounds flank steak
- 2 tablespoons olive oil
- Salt and pepper to taste
- 1 teaspoon garlic powder
- 1 teaspoon dried oregano
- 4 cups fresh arugula
- 1 cup cherry tomatoes, halved
- ¼ cup shaved Parmesan cheese
- 2 tablespoons balsamic vinegar
- 1 tablespoon lemon juice
Instructions
- Preheat your grill or grill pan over medium-high heat.
- Rub the flank steak with olive oil, then season generously with salt, pepper, garlic powder, and oregano.
- Grill the steak for about 4-5 minutes on each side for medium-rare, or until it reaches your desired doneness.
- Remove the steak from the grill and let it rest for 5-10 minutes before slicing it thinly against the grain.
- In a large bowl, combine the arugula, cherry tomatoes, balsamic vinegar, and lemon juice. Toss gently to coat.
- Arrange the arugula mixture on a serving platter and top with the sliced steak.
- Finish with shaved Parmesan cheese on top. Serve immediately.
Notes
- For added flavor, marinate the steak in the olive oil, garlic powder, oregano, and a splash of balsamic vinegar for 1-2 hours before grilling.
- Substitute the arugula with spinach or mixed greens for a different taste and texture.
