- 1 cup canned diced tomatoes with green chilies (drained)
- 1 cup corn (frozen or canned, drained)
- 1 cup black beans (canned, drained and rinsed)
- 1 cup shredded cheddar cheese
- 1 cup cooked rice (optional)
- Salt and pepper to taste
- Fresh cilantro, chopped (for garnish)
- Sour cream (for serving)
- Tortilla chips (for serving)
Instructions
- In a large skillet over medium heat, brown the ground beef until fully cooked, about 5-7 minutes. Drain excess fat if necessary.
- Add the diced onion and bell pepper to the skillet and sauté for about 3-4 minutes until softened.
- Stir in the minced garlic and cook for an additional 1 minute until fragrant.
- Sprinkle the taco seasoning over the beef mixture and stir to combine. Add the diced tomatoes, corn, and black beans, mixing well. If using, stir in the cooked rice.
- Reduce heat to low and let the mixture simmer for about 5 minutes, allowing the flavors to meld.
- Sprinkle the shredded cheddar cheese on top and cover the skillet. Let it sit for 2-3 minutes until the cheese is melted.
- Remove from heat and garnish with fresh cilantro. Serve with sour cream and tortilla chips on the side.
