  • 1 cup black beans (canned, drained and rinsed)
  • 1 cup shredded cheddar cheese
  • 1 cup cooked rice (optional)
  • Salt and pepper to taste
  • Fresh cilantro, chopped (for garnish)
  • Sour cream (for serving)
  • Tortilla chips (for serving)

Instructions

  1. In a large skillet over medium heat, brown the ground beef until fully cooked, about 5-7 minutes. Drain excess fat if necessary.
  2. Add the diced onion and bell pepper to the skillet and sauté for about 3-4 minutes until softened.
  3. Stir in the minced garlic and cook for an additional 1 minute until fragrant.
  4. Sprinkle the taco seasoning over the beef mixture and stir to combine. Add the diced tomatoes, corn, and black beans, mixing well. If using, stir in the cooked rice.
  5. Reduce heat to low and let the mixture simmer for about 5 minutes, allowing the flavors to meld.
  6. Sprinkle the shredded cheddar cheese on top and cover the skillet. Let it sit for 2-3 minutes until the cheese is melted.
  7. Remove from heat and garnish with fresh cilantro. Serve with sour cream and tortilla chips on the side.
