Ingredients

  • 2 pounds beef chuck, cut into 1-inch cubes
  • 2 tablespoons olive oil
  • 1 large onion, chopped
  • 4 cloves garlic, minced
  • 1 can (14.5 ounces) diced tomatoes, undrained
  • 2 cups beef broth
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 cup orzo pasta
  • ½ cup grated Parmesan cheese
  • Fresh parsley, chopped (for garnish)

Instructions

  1. In a large pot or Dutch oven, heat the olive oil over medium-high heat. Add the beef cubes and brown on all sides, about 5-7 minutes. Remove the beef and set aside.
  2. In the same pot, add the chopped onion and sauté until softened, about 4-5 minutes. Stir in the minced garlic and cook for an additional minute.
  3. Return the browned beef to the pot. Add the diced tomatoes (with their juice), beef broth, oregano, thyme, salt, and black pepper. Bring to a boil, then reduce the heat to low. Cover and simmer for 1.5 to 2 hours, or until the beef is tender.
  4. Once the beef is tender, stir in the orzo pasta. Cover and cook for an additional 10-12 minutes, or until the orzo is cooked al dente.
  5. Remove from heat and stir in the grated Parmesan cheese. Let it sit for a few minutes to thicken slightly.
  6. Serve hot, garnished with fresh parsley.
