Description

Beef Curry Delight is a flavorful and hearty dish made with tender beef, aromatic spices, and creamy coconut milk, perfect for a comforting meal.


Ingredients

  • 2 pounds beef chuck, cut into 1-inch cubes
  • 2 tablespoons vegetable oil
  • 1 large onion, finely chopped
  • 4 cloves garlic, minced
  • 1 tablespoon fresh ginger, minced
  • 2 tablespoons curry powder
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1/2 teaspoon turmeric
  • 1/2 teaspoon cayenne pepper (adjust to taste)
  • 1 can (14 ounces) coconut milk
  • 1 cup beef broth
  • 2 medium carrots, sliced
  • 1 red bell pepper, chopped
  • Salt and pepper to taste
  • Fresh cilantro, for garnish

Instructions

  1. In a large pot or Dutch oven, heat the vegetable oil over medium-high heat. Add the beef cubes and brown on all sides, about 5-7 minutes. Remove the beef and set aside.
  2. In the same pot, add the chopped onion and sauté until translucent, about 5 minutes. Stir in the minced garlic and ginger, cooking for another minute until fragrant.
  3. Add the curry powder, cumin, coriander, turmeric, and cayenne pepper to the pot. Stir well to coat the onions and cook for 1-2 minutes to toast the spices.
  4. Return the browned beef to the pot and pour in the coconut milk and beef broth. Stir to combine and bring to a simmer.
  5. Add the sliced carrots and chopped red bell pepper. Season with salt and pepper to taste. Cover the pot and reduce the heat to low. Simmer for 1.5 to 2 hours, or until the beef is tender.
  6. Once the beef is tender, taste and adjust seasoning if necessary. Serve hot, garnished with fresh cilantro.

Notes

  • For a spicier kick, add diced jalapeños or a splash of hot sauce during cooking.
  • Serve the curry over steamed rice or with warm naan for a complete meal.
  • You can also add other vegetables like peas or potatoes for added nutrition.
