- 2 pounds beef chuck, cut into 1-inch cubes
- 2 tablespoons vegetable oil
- 1 large onion, finely chopped
- 4 cloves garlic, minced
- 1 tablespoon fresh ginger, minced
- 2 tablespoons curry powder
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 1/2 teaspoon turmeric
- 1/2 teaspoon cayenne pepper (adjust to taste)
- 1 can (14 ounces) coconut milk
- 1 cup beef broth
- 2 medium carrots, sliced
- 1 red bell pepper, chopped
- Salt and pepper to taste
- Fresh cilantro, for garnish
Instructions
- In a large pot or Dutch oven, heat the vegetable oil over medium-high heat. Add the beef cubes and brown on all sides, about 5-7 minutes. Remove the beef and set aside.
- In the same pot, add the chopped onion and sauté until translucent, about 5 minutes. Stir in the minced garlic and ginger, cooking for another minute until fragrant.
- Add the curry powder, cumin, coriander, turmeric, and cayenne pepper to the pot. Stir well to coat the onions and cook for 1-2 minutes to toast the spices.
- Return the browned beef to the pot and pour in the coconut milk and beef broth. Stir to combine and bring to a simmer.
- Add the sliced carrots and chopped red bell pepper. Season with salt and pepper to taste. Cover the pot and reduce the heat to low. Simmer for 1.5 to 2 hours, or until the beef is tender.
- Once the beef is tender, taste and adjust seasoning if necessary. Serve hot, garnished with fresh cilantro.
Notes
- For a spicier kick, add diced jalapeños or a splash of hot sauce during cooking.
- Serve the curry over steamed rice or with warm naan for a complete meal.
- You can also add other vegetables like peas or potatoes for added nutrition.
