Description
Delicious and cheesy beef burritos filled with rice, black beans, corn, and topped with avocado and sour cream.

- 2 cups cooked rice
- 1 pound ground beef
- 1 tablespoon olive oil
- 1 small onion, chopped
- 2 cloves garlic, minced
- 1 packet taco seasoning (about 1 ounce)
- 1 can (15 ounces) black beans, drained and rinsed
- 1 cup corn (frozen or canned)
- 1 cup salsa
- 1 cup shredded cheddar cheese
- 4 large flour tortillas (10-inch)
- 1 cup sour cream
- 1 avocado, sliced
- Fresh cilantro, for garnish (optional)
Instructions
- Heat the olive oil in a large skillet over medium heat. Add the chopped onion and sauté until translucent, about 3 minutes.
- Add the minced garlic and cook for another minute.
- Introduce the ground beef, breaking it apart as it cooks. Brown thoroughly for about 6-8 minutes and drain excess fat.
- Mix in the taco seasoning, black beans, corn, and salsa. Let simmer for about 5 minutes, stirring occasionally.
- Warm the flour tortillas in a separate skillet or microwave until soft and pliable.
- To build each burrito, lay a tortilla flat and spoon ½ cup of cooked rice into the center.
- Top with ¾ cup of the beef mixture, shredded cheddar cheese, sour cream, and avocado slices.
- Fold in the sides of the tortilla and roll it up from the bottom to form a burrito.
- For added crunch, place burritos seam-side down in a skillet over medium heat for 2-3 minutes on each side until golden brown.
- Serve warm, garnished with fresh cilantro if desired.

- Feel free to customize the fillings with your favorite ingredients.
- These burritos can be made ahead and frozen for later use.
- For a vegetarian option, substitute ground beef with lentils or additional beans.
