Description

Delicious and cheesy beef burritos filled with rice, black beans, corn, and topped with avocado and sour cream.


Ingredients

  • 2 cups cooked rice
  • 1 pound ground beef
  • 1 tablespoon olive oil
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 1 packet taco seasoning (about 1 ounce)
  • 1 can (15 ounces) black beans, drained and rinsed
  • 1 cup corn (frozen or canned)
  • 1 cup salsa
  • 1 cup shredded cheddar cheese
  • 4 large flour tortillas (10-inch)
  • 1 cup sour cream
  • 1 avocado, sliced
  • Fresh cilantro, for garnish (optional)

Instructions

  1. Heat the olive oil in a large skillet over medium heat. Add the chopped onion and sauté until translucent, about 3 minutes.
  2. Add the minced garlic and cook for another minute.
  3. Introduce the ground beef, breaking it apart as it cooks. Brown thoroughly for about 6-8 minutes and drain excess fat.
  4. Mix in the taco seasoning, black beans, corn, and salsa. Let simmer for about 5 minutes, stirring occasionally.
  5. Warm the flour tortillas in a separate skillet or microwave until soft and pliable.
  6. To build each burrito, lay a tortilla flat and spoon ½ cup of cooked rice into the center.
  7. Top with ¾ cup of the beef mixture, shredded cheddar cheese, sour cream, and avocado slices.
  8. Fold in the sides of the tortilla and roll it up from the bottom to form a burrito.
  9. For added crunch, place burritos seam-side down in a skillet over medium heat for 2-3 minutes on each side until golden brown.
  10. Serve warm, garnished with fresh cilantro if desired.
