Ingredients

  • 2 tablespoons olive oil
  • 3 tablespoons lime juice (about 2 limes)
  • 3 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • 1 teaspoon smoked paprika
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 8 small corn tortillas
  • 1 cup chopped fresh cilantro
  • 1 cup diced onion
  • 1 cup diced tomatoes
  • Lime wedges for serving

Instructions

  1. In a large bowl, combine olive oil, lime juice, minced garlic, cumin, chili powder, smoked paprika, salt, and black pepper. Whisk until well mixed.
  2. Add the flank steak to the marinade, ensuring it is fully coated. Cover and refrigerate for at least 1 hour, or up to 4 hours for more flavor.
  3. Preheat a grill or grill pan over medium-high heat. Remove the steak from the marinade and discard the marinade.
  4. Grill the steak for about 5-7 minutes on each side, or until it reaches your desired level of doneness (135°F for medium-rare).
  5. Remove the steak from the grill and let it rest for 5 minutes before slicing it thinly against the grain.
  6. While the steak is resting, warm the corn tortillas on the grill for about 30 seconds on each side until they are pliable.
  7. To assemble the tacos, place a few slices of steak on each tortilla. Top with chopped cilantro, diced onion, and diced tomatoes. Serve with lime wedges on the side.

  • For a spicier kick, add sliced jalapeños or a drizzle of hot sauce on top of the tacos.
