  • 1 pound ground beef

  • 1 bell pepper, diced (any color)
  • 1 can (14.5 ounces) crushed tomatoes, with juices
  • 2 cups beef stock
  • 1 tablespoon soy sauce
  • 1 tablespoon smoked paprika
  • 1 teaspoon dried basil
  • 1 teaspoon sea salt
  • 1/2 teaspoon ground black pepper
  • 1 cup elbow macaroni
  • 1 cup frozen green peas
  • 1/2 cup grated mozzarella cheese (optional)

Instructions

  1. In a large skillet, warm the olive oil over medium heat. Add the ground beef and cook until it’s nicely browned, breaking it up with a spatula, which should take about 5-7 minutes. If there’s excess fat, drain it off.
  2. Toss in the diced onion, minced garlic, and bell pepper. Sauté for approximately 5 minutes, allowing the vegetables to soften and become fragrant.
  3. Pour in the crushed tomatoes along with their juices, beef stock, soy sauce, smoked paprika, basil, sea salt, and black pepper. Stir well and bring the mixture to a vigorous boil.
  4. Once boiling, stir in the elbow macaroni. Lower the heat, cover the skillet, and let it simmer for about 15 minutes, stirring occasionally, until the pasta is tender.
  5. Add the frozen peas and let them cook for an additional 5 minutes. If you like, sprinkle the grated mozzarella cheese on top, cover, and allow it to melt.
  6. Take the skillet off the heat and let it rest for a few minutes before serving.

  • For an extra kick, consider adding a pinch of cayenne pepper or a splash of your favorite hot sauce.
