- 1 pound ground beef
- 1 medium onion, diced
- 2 cloves garlic, minced
- 1 bell pepper, diced (any color)
- 1 can (14.5 ounces) crushed tomatoes, with juices
- 2 cups beef stock
- 1 tablespoon soy sauce
- 1 tablespoon smoked paprika
- 1 teaspoon dried basil
- 1 teaspoon sea salt
- 1/2 teaspoon ground black pepper
- 1 cup elbow macaroni
- 1 cup frozen green peas
- 1/2 cup grated mozzarella cheese (optional)
Instructions
- In a large skillet, warm the olive oil over medium heat. Add the ground beef and cook until it’s nicely browned, breaking it up with a spatula, which should take about 5-7 minutes. If there’s excess fat, drain it off.
- Toss in the diced onion, minced garlic, and bell pepper. Sauté for approximately 5 minutes, allowing the vegetables to soften and become fragrant.
- Pour in the crushed tomatoes along with their juices, beef stock, soy sauce, smoked paprika, basil, sea salt, and black pepper. Stir well and bring the mixture to a vigorous boil.
- Once boiling, stir in the elbow macaroni. Lower the heat, cover the skillet, and let it simmer for about 15 minutes, stirring occasionally, until the pasta is tender.
- Add the frozen peas and let them cook for an additional 5 minutes. If you like, sprinkle the grated mozzarella cheese on top, cover, and allow it to melt.
- Take the skillet off the heat and let it rest for a few minutes before serving.
Notes
- For an extra kick, consider adding a pinch of cayenne pepper or a splash of your favorite hot sauce.
- You can swap out the ground beef for ground turkey or chicken for a lighter alternative.
- For a vegetarian option, use lentils and vegetable stock in place of the meat and beef broth.
