A delicious and hearty Beef and Bean Burrito Casserole that combines ground beef, beans, and cheese, perfect for a family meal.


Ingredients

  • 1 pound ground beef
  • 1 can (15 ounces) black beans, drained and rinsed
  • 1 can (15 ounces) pinto beans, drained and rinsed
  • 1 can (10 ounces) diced tomatoes with green chilies
  • 1 can (8 ounces) tomato sauce
  • 1 tablespoon taco seasoning
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 8 flour tortillas (10-inch size)
  • 2 cups shredded cheddar cheese
  • 1 cup sour cream
  • 1/4 cup chopped fresh cilantro (optional)
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large skillet over medium heat, brown the ground beef until fully cooked, breaking it apart with a spatula. Drain excess fat if necessary.
  3. Stir in the black beans, pinto beans, diced tomatoes, tomato sauce, taco seasoning, garlic powder, onion powder, salt, and pepper. Cook for about 5 minutes until heated through.
  4. In a 9×13-inch baking dish, spread a thin layer of the beef and bean mixture on the bottom.
  5. Layer 4 tortillas over the mixture, slightly overlapping them.
  6. Spread half of the remaining beef and bean mixture over the tortillas.
  7. Add 1 cup of shredded cheddar cheese on top of the mixture.
  8. Repeat the layering process with 4 more tortillas, the rest of the beef and bean mixture, and the remaining cheese.
  9. Cover the baking dish with aluminum foil and bake for 25 minutes.
  10. Remove the foil and bake for an additional 10-15 minutes, or until the cheese is bubbly and golden.
  11. Let the casserole cool for 5 minutes before serving. Top with sour cream and cilantro if desired.

  • For a spicier kick, add diced jalapeños or a dash of hot sauce to the beef mixture.
