A delicious and hearty Beef and Bean Burrito Casserole that combines ground beef, beans, and cheese, perfect for a family meal.

- 1 pound ground beef
- 1 can (15 ounces) black beans, drained and rinsed
- 1 can (15 ounces) pinto beans, drained and rinsed
- 1 can (10 ounces) diced tomatoes with green chilies
- 1 can (8 ounces) tomato sauce
- 1 tablespoon taco seasoning
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 8 flour tortillas (10-inch size)
- 2 cups shredded cheddar cheese
- 1 cup sour cream
- 1/4 cup chopped fresh cilantro (optional)
- Salt and pepper to taste
Instructions
- Preheat your oven to 350°F (175°C).
- In a large skillet over medium heat, brown the ground beef until fully cooked, breaking it apart with a spatula. Drain excess fat if necessary.
- Stir in the black beans, pinto beans, diced tomatoes, tomato sauce, taco seasoning, garlic powder, onion powder, salt, and pepper. Cook for about 5 minutes until heated through.
- In a 9×13-inch baking dish, spread a thin layer of the beef and bean mixture on the bottom.
- Layer 4 tortillas over the mixture, slightly overlapping them.
- Spread half of the remaining beef and bean mixture over the tortillas.
- Add 1 cup of shredded cheddar cheese on top of the mixture.
- Repeat the layering process with 4 more tortillas, the rest of the beef and bean mixture, and the remaining cheese.
- Cover the baking dish with aluminum foil and bake for 25 minutes.
- Remove the foil and bake for an additional 10-15 minutes, or until the cheese is bubbly and golden.
- Let the casserole cool for 5 minutes before serving. Top with sour cream and cilantro if desired.
Notes
- For a spicier kick, add diced jalapeños or a dash of hot sauce to the beef mixture.
- Substitute ground turkey or chicken for a leaner option, or use a meat alternative for a vegetarian version.
